BERTUCCI’S TORTELLINI
I love Bertucci’s (which you’ll find out in Boston area). This is a dish I ordered one night that was super yummy and just sort of made up a recipe for.
- Fresh Tortellini (cheese filled and spinach if possible)
- 1 can whole tomatoes, cut up, reserve most of the juice
- Mushrooms (portabellos are good)
- Sausage (italian or andouille), cooked cut into pieces
- Basil
- Oregano (lesser amount than basil)
- Minced garlic
- Some sugar
- Salt & Pepper to taste
- Light cream (a little)Cook pasta according to package directions. Sautee sausage and mushrooms in a bit of olive oil if you need it. Add all other ingredients and simmer – except fresh basil and cream. Add basil and cream at end and heat through. Toss with pasta!

Mmmmmm….Bertuccis….I’ve never had a tortellini dish there, but I adore there pizza, the linguini and meatballs and rigatoni aburztzi.
I am making this tonight… When you say reserve the juice of the tomatoes, do I use the juice or not? Thanks!
it means I dump off some of the juice in the can, and then use the rest of the juice in the recipe. does that make sense? hopefully!
Jane, Thank you SO much! Yes, that does make sense. I will do that! We are looking forward to it. Although we have never heard of Bertucci’s (we live in Wisconsin!), the dish sounds incredible. Have a great afternoon.
I hope the recipe works for you! I miss Bertucci’s terribly…it’s a restaurant in New England. I almost always eat there when we go back to visit!
Approximately how much of each ingredient would you say you include. I’d hate to make this and have it be too sugary or too spice infused…

this is totally one of my non-recipe recipes, but here are some estimates for you!
about 1 tsp basil
about 1/2 tsp oregano
1-3 fresh garlic cloves (depending on how much you like garlic)
about 2 teaspoons or so of sugar
a few shakes of pepper
try 1/4 – 1/2 teaspoon of salt and then taste it and add more if necessary
