Sweet Chex Mix

SWEET CHEX MIX
- 1 small box Rice Chex
- 2 C coconut
- 1 C sliced almonds
- 1 C karo
- 1 C sugar
- 1 1/2 C butter
- Dash salt
- 1/2 t. baking soda
- 1 t. vanilla

Cook sugar, karo, salt and butter in microwave 5 minutes. Stir and cook 2 more minutes (watch out – it’s HOT). Add vanilla and soda then pour mixture over remaining dry ingredients.

    I love your comment, brenda! all of our party guests yesterday kept eating it uncontrollably and then feeling sick to their stomachs (thankfully they claimed that the pizza helped them feel better. hahaha) anyway, it is DANGEROUS stuff. glad you found it as equally irresistible as I do! :)

    I am obsessed!!! With this stuff. My sister makes a hugenormous batch of it for Halloween every year. Pretty sure she got the recipe from you! Anyways, I eat the first batch every year and than she has to make another one. The one thing I truly cannot stop eating….ever

  7. I made this too for Super Bowl Sunday, but the recipe I got from my friend was a little different. There was no salt or baking soda, and there was a box of Golden Grahams in the mix too! I think I gained 5 pounds just making it before I even ate any!

    How far in advance can you make this? I’m looking at having a party on a Friday night, but will have to get everything ready on the Monday before! I thought this would be a perfect snack for the girls!

      well…… it will probably last, I think it’s yummier closer to when you make it, just because the cereal is still a bit crispier, but that said, we usually eat this for days after we make it. :) I would just seal it in some ziploc bags to keep it from getting stale and you should be good to go. :)
