Tostada Goop

Tostada Goop
From Barbara Tanner, my aunt
– 1 can cream chicken soup
– 1 can green chiles
– 1 chopped onion (I do less than a 1 whole onion)
– 1 can chopped tomatoes
– 1 can black beans (just long enough to heat)
– six (or so) boneless skinless chicken breasts (can cut into chunks now or cook whole then shred it up later, which is what I usually do)

cook in a crock pot on low forever (as in 8 hours or so…all day works). add beans at the end. serve over tostada shells and top with lettuce/tomatoes/sour cream/cheese/whatever suits your fancy!

    I love this recipe, but I am allergic to tomatoes, so I use a jar of roasted red bell peppers instead. Turns out great!

    What do you serve it over/with? And what kind of chili peppers? Green chilies?

      good questions! I just updated the recipe, but yes, one can of green chiles (those small cans they have at the store) and I serve it on the crispy, flat tostada shells and top with lettuce, tomatoes, cheese, salsa, etc. yum yum!

    This sounds good, how many do you think it would serve?

      a ton! there are 6 chicken breasts – even conservatively if you estimated half a breast per person, that’s 12 people…but since it’s a filler in your tostada/fajita/whatever, I feel like you can really stretch it. hope that helps!

      when I made it back when it was just nate and I, I would freeze the extra into a few containers for quick leftovers for later! :) hope you like it!
