Happy Sunday, everyone! I like Sunday mornings because I have time to make breakfast, my favorite meal by far. This morning we had a Puffed Oven Pancake. Hit the spot!

A few repeats on the menu this week as we’ve had lots of leftovers and some surprise invites to friends’ homes for dinner…love those weeks!

Sunday: Mango Glazed Pork Chops w/ brown rice, caesar salad, corn on the cob, and grilled baby zucchini. Banana Cream Pie for dessert!
Monday: Hearty Beef Stew with crusty bread
Tuesday: Grilled Salmon and jasmine rice with mixed green veggies
Wednesday: Parmesan Crusted Chicken Dijon with noodles and salad
Thursday: Left overs
Friday: Date Night (eat out)
Saturday: Not sure yet…I’ll see what the fam is in the mood for…Mac and Cheese does sound good Jane!

Monday-(busy day) crock pot roast, mashed potatoes, veggie
Tuesday-White Lasagna (Argentine inspired), green salad
Wednesday-leftovers
Thursday-homemade mac & cheese
Friday-shrimp chowder, rolls, sliced fruit
Saturday-grilled cheese sandwiches, tomato soup, sliced veggies
Sunday-baked rigatoni with red, meaty sauce, green salad, bread sticks

I’m so late this week, but here it goes-
Tuesday- italian pork chops, green beans, rolls
Wednesday- Grilled chicken, thai noodles
Thursday- spaghetti, sausage, red sauce
Friday- potato soup
Saturday- fajitas
Sunday- mac and cheese!

Those pancakes remind me of German Apple Pancakes that I used to make from my very first “just for kids” cookbook. Yum.
On top of my pancakes was a Apple Cinnamon syrup very similar to this one found on All Recipes posted by Kathy Dance:
INGREDIENTS
1/2 cup packed brown sugar
1/3 cup water
2 tablespoons butter or margarine
1 teaspoon cornstarch
1/2 teaspoon ground cinnamon
3 medium apples, peeled, thinly sliced
DIRECTIONS
1. In a saucepan over medium heat, bring brown sugar, water, butter and cornstarch and cinnamon to a boil; boil for 2 minutes until thick. Reduce heat to medium. Add apples; cook for 10-12 minutes or until apples are tender.

Jane - you know your Dad lived on oven pancakes for 6 weeks when he was on his mission in Sweden!!! Maybe he has a recipe he could share….
