Jane–forty cloves indeed. It was quite yummy, not at all overpowering. Got the recipe from Martha’s mag Everyday Food. Just a basic roasted chicken recipe: Take a chicken, rub with butter, salt, and pepper. Put in roasting pan and surround with some sprigs of fresh thyme, 1 TBS butter and 40 cloves of garlic. Roast, basting occasionally with pan juices.
The best tip was how to peel all those cloves: Put the separated, unpeeled cloves in a bowl. Cover with a bowl the same size to make a ball. Shake vigorously for 45 seconds. The peel that doesn’t fall off is super easy to remove.
