Hi Jane,
I just found your site from blog-jumping. Hope you don't mind! This recipe looks delicious (and easy!). I have a "twisted" guacamole recipe I'd love to share...

(Don’t let the tofu scare you!)

1 large avocado

1/2 tsp fresh lemon juice

2 Tbsp Tofututti’s Cream Cheese (at Trader Joe’s)

1/2 cup medium Pace salsa

1 small tomato cut into chunks (optional)

~This is just an estimate… you want the end product to have a slight pinkish/red tint. Mix all ingredients, cutting in the avocado and cream cheese so you have a chunky mixture.

Thanks for having such a fabulous site!
Shanelle

One of my old roommates used to put in about a tablespoon of mayo. It can make the guacamole seem heavier, but it's great if your avocados are a little on the green side.
