A funny thing happened last night. I grabbed a fortune cookie, opened the wrapper, cracked the cookie, pulled out the fortune, tossed said fortune in the trash and ate the cookie. About 5 minutes later I picked up another fortune cookie and when I got to the fortune, I realized I hadn’t read my last fortune. And not only had I not read it, but I threw it away without even THINKING about reading it. Why so funny, you ask? Well, I’ve never ever done that before. I’ve always read my “fortune,” which usually goes something like, “You have nice hair.” Yes, they are always SO helpful, but still, you gotta read your fortune, right? Apparently my subconscious doesn’t think so. Now I don’t know my future or the state of my hair. Bummer. But the cookie was GOOD.
I can’t believe not one of you commented on the fact I ate GOAT last week. Yes, people, we had goat for dinner. No response? Really?

tuesday: pork and potato casserole
wednesday: chicken/bell pepper lettuce wraps
thursday: linguine with butter, Parmesan and arugula + garlic bread
friday: eat out
saturday: football! tailgate snacks. not sure what i’m bringing but maybe some mac and cheese.

Tuesday – Grandpa’s BBQ chicken w/ brown rice and veggies(carrots and green beans?)

Friday – BLTA sandwiches or chili mac(from Fat Free Vegan) depends on what the pregnant lady wants.
Weekend – salsa, chips, and lots of TV snacks a la hubby.
I can relate… only my recurring recipe is pasta with roasted red pepper cream sauce. It has been on my weekly menu for a couple months, I think. What is the hold up?! I have a good feeling this week- I think this might just be the one!

I decided to go with an Asian theme this week because we have a ton of leftover rice we made to go with the Indian food yesterday. I stole the pizza idea from that restaurant in San Diego:)

of all the meats i tried in africa, i’ve never had goat–but probably a few of its cousins. how did they prepare it, and did it taste strange to you? i was a little surprised how easily palatable all those funky meats were to my american tastes.
speaking of meat, since aaron is dissecting “meat” all semester in anatomy class, his appetite for eating meat has dwindled. here’s our heavily vegetarian menu for the week:
-italian wedding soup, dutch oven bread, salad
-chinese eggplant salad, dumplings
-homemade mac and cheese, roasted asparagus
-lentil soup, whole grain artisan bread
-quiche, braised cabbage (sounds nasty, but it’s SO good)
Jane, this is soooo fun. My in-laws are coming into town, so:
MON: grilled chicken, chipolte sausage, bell peppers, and squash; iced raspberry herb tea
TUE: leftovers, add cous cous
WED: Brie and Apple whole grain paninis; Granny’s Cole Slaw
THURS: Lamb Tagine with extra pears on the side (my favorite fall stew!!)
FRI: Oven-fried Bisquick chicken; open-faced cucumber sandwiches;
spinach/craisin/blue cheese salad with candied walnuts from Whole Foods
SAT: Chicken Pot Pie
SUN: the Mr. will cook spaghetti with a tossed salad

I made a pretty big shopping trip yesterday, so let’s hope the motivation keeps going throughout the next week or so!

It has been a rough last couple of weeks with everyone sick, and I started back to work last week so not much meal planning has happened lately. I am trying to get back this week…..kind of. Thanks for all of your great recipes lately!

Lindsay – I knew I could count on you to comment on the goat. It tasted fine. I believe they grilled it, then they topped it with some yummy saucy stuff and a bunch of greens we’d never eaten before, so everything on the plate was a new flavor. I won’t start cooking with goat, but it was fun to try…I can only imagine what you ate in africa. aaron would not have liked our goat dinner…too many veggies.
