Featured Recipe: Thai Chicken Pizza

One thing we really miss in San Diego is Leucadia Pizza.  And one of our favorites at Leucadia is the Thai Chicken Pizza.  If you live in San Diego and you are NOT eating this pizza, it’s a crime.

I’ve begun my quest to recreate it.  And I think I’m almost there!

Featured Recipe: Thai Chicken Pizza

Ingredients
  • Pizza crust (homemade, TJ’s $1 crust, whatever)
  • Shredded carrots (about ½ – ¾ of a carrot…1 full carrot was a little much)
  • Bean sprouts
  • Chopped green onion
  • Chicken breast, cut into small cubes or strips and sauteed in olive oil (season with s&p)
  • Peanuts (I went with roasted unsalted…you don’t need the salt on the peanuts)
  • Peanut Sauce
  • Chopped Cilantro
  • Mozzarella Cheese
Notes
Leucadia’s peanut sauce really makes the pizza. A perfect blend of sweet and spicy. I tried the Trader Joe’s Satay Peanut Sauce. It was definitely not sweet enough and the texture wasn’t right.

I just bought Organic Peanut Sauce at Whole Foods. I think this just might do it. I haven’t used it on the pizza yet, but I added some brown sugar to the sauce and it tastes awesome. And the texture is better for pizza. Next time I make the pizza, I’ll let you know how this sauce goes.  I think it will be a winner!


Whenever I make homemade pizza, I always put all the toppings on top of the sauce and add the mozzarella cheese last. Especially with fresh herbs. It’s the way to go.

  1. Wow, that looks delicious. Have you ever been to Patxi’s Pizza in PA? They put the toppings on backwards, too. Great idea.

    We have been making our own Thai Chicken pizza for about 4 years now. Everything is pretty much the same except we use our own peanut sauce recipe (got it a LONG time ago from Rachael Ray – 30 Min Meal show, it was used for a different meal but is perfect for this).

    Peanut Sauce:
    4 rounded tablespoonfuls chunky peanut butter
    3 tablespoons dark soy, Tamari
    3 tablespoons honey
    1-inch ginger root, peeled and minced
    1 clove garlic, crushed
    1 teaspoon crushed red pepper flakes
    1/2 orange, juiced

    Hi Jane, I was going to leave you a peanut sauce recipe but it would pretty much duplicate the one left by Becki…the only difference is I would use some Sriracha sauce to spice mine up instead of crushed red pepper flakes–it adds heat with a more SE Asian flair. I also use thai-baked tofu (Trader Joe’s) instead of chicken, and I put the cheese down first so that the julienned veggies on top get slightly browned on the edges while baking (I put raw bean sprouts and cilantro on top after it comes out of the over for that hot/cold, fresh/cooked combo I love so much about Thai and Vietnamese cuisine. For some weird reason, I find that a mixture of sharp cheddar and mozzarella go really well with the peanut sauce. Maybe it’s the saltiness of the cheddar with the sweet-ish sauce I like.

    One thing I have noticed is that when I make pizza with peanut sauce, I tend not to like it as well the next day. Something about the peanut sauce makes the crust mushy. I don’t know…maybe it’s all in my head. Has anyone else noticed this, or do you tend not to have leftovers when you make pizza?

    I use this peanut sauce as an all-purpose peanut sauce over soba noodles, in lettuce wraps, salads, etc. I don’t think I’ve tried it on Pizza yet, but I may have to give it a whirl. This is more spicy & tangy than it is sweet because I don’t add any sweeteners to it. If you make it in advance, it thickens up nicely. I also like to use crunchy peanut butter so I don’t have to add extra peanuts.

    2 cloves minced garlic
    2 T grated fresh ginger
    2 T soy sauce
    3 T rice wine vinegar
    3 T peanut butter
    1 T chili garlic sauce
    1 t sesame oil

    mix together until well blended.

  6. We LOVE this peanut sauce! Just about anything tastes good with this stuff on it. A friend from Thailand gave me this recipe so if it’s good enough for her then…I’ll trust it.

    Ingredients

    2 tb Masaman Curry Paste
    1 tsp Coriander (ground)
    1 tsp Cumin
    1 tbsp Oil
    1 can Coconut Milk (2.5 cups) (Mae Ploy is best)
    1 tsp Salt
    1 tb Tamarind (or rice wine vinegar)
    ½ cup Sugar
    ½ cup Peanut Butter (creamy or crunchy)

    In truly authentic cooking, fresh ground roasted peanuts are used in the sauce instead of
    peanut butter.

    1. Heat the oil in the pan at medium heat.
    2. Add masaman curry paste, coriander, cumin and simmer for 1-2 min to allow flavor and aroma to come out.
    3. Add coconut milk, salt, tamarind, and sugar
    4. Add peanut butter last and simmer until sauce has thickened. It is important to add the peanut butter last as cooking it to long will cause the peanut oils to escape and make the sauce too oily.

    Here is the one we always make:

    1/2 14oz can coconut milk
    1/2 C brown sugar
    1/2 C peanut butter
    2Tbsp dark soy sauce (i use the tamari)
    1 Tbs red pepper flakes
    1 Tbs sesame oil
    2 cloves garlic (minced)

    Cream sugar and PB
    Slowly stream in sesame oil
    combine with soy sauce, red pepp flakes and garlic (&lemongrass)
    Add coco milk a little at a time,
    stirring to combine. YUM!

    This one is a little sweeter b/c of the brown sugar,
    and it keeps nicely. The recipe also call for 1 Tbsp of lemongrass minced, but I havent added that since I dont usually have it on hand.

    I spent a few months in Cote d’Ivoire once and our favourite dish was peanut sauce over rice. This isn’t quite the recipe you were looking for but it is usually a hit with kids, a meat stretcher and very tasty to boot. Here is how I make it:

    West African Ground Nut Stew

    3 Tbsp Oil
    2 lbs beef or chicken cubes

    Brown meat. Then add:

    6 cups water (or better yet, broth)
    3/4 cup tomato paste
    4 medium onions minced
    1/2 tsp nutmeg
    1 Tbsp chili powder
    1 clove minced garlic
    Ceyenne pepper to taste (the Africans eat it HOT)

    Simmer until meat is tender. About 15 minutes before serving, stir some of the liquid into 1/2 cup of peanut butter (preferably the natural kind). Stir this mixture back into the pot. Peanut butter will thicken the mixture. You want it saucy and not too thick so give the peanut butter time to thicken up your mixture before adding more. Keep adding peanut butter until desired consistency is achieved. Serve over rice.

  11. I love me some chicken! Thanks for sharing that recipe. Here’s a quick tip for when you’re in a hurry and you need grilled chicken fast. First of all, you need to buy the pre-cooked grilled chicken packages at Sam’s Club. They are in the frozen section. They’re mesquite flavored…and quite tasty. So anyway, when you’re in a pinch, just pop these babies in the microwave (about 5 minutes for two), and they come out hot & ready to eat. You can cut them up into strips to use in a salad, eat them as is, or make a sandwich out of them.

    Spicy Peanut Sauce for Chicken, Beef or Shrimp Sate

    Ingredients:

    2 teaspoons peanut oil
    2 shallots, minced
    2 garlic cloves, minced
    1 one inch piece of fresh ginger, finely chopped
    1 tablespoon thai red curry paste (or more to taste)
    1/4 cup natural peanut butter
    1/2 cup brown sugar
    1 cup unsweetened coconut milk
    soy sauce, to taste (gotta get some umami!)

    Method:

    Sauté shallots, garlic, and ginger in oil in a saucepan until soft. Add red curry paste and cook 1 minute until fragrant. Add peanut butter, sugar, and coconut milk. Cook over medium heat until thick, about 15 minutes. Add soy to taste and water if it is too thick. I puree the sauce with a handheld blender until smooth.

    Serving Size: Makes 1-1/2 cups sauce.

    Just wondering if you ever found a store-bought peanut sauce that worked well for this pizza? Or a super easy to make at home recipe?

    • hi courtney! it’s been so long since I’ve made thai chicken pizza I haven’t done any experimenting at all! I do want to try at least a few of the great looking recipes people shared above, but sadly I can’t point you to one particular recipe.

      now I’m back on the quest!!!
