For the Happy Eats Club, we determined Halloween to be one of our legal cheat days, and boy am I glad we did. I certainly enjoyed eating cookies and candy all day…and I didn’t even gorge on treats quite like I thought I would, so that’s good!
But now the party’s over and the Halloween cookies I made with Cate on Friday have been teasing me all weekend. Blasted Happy Eats Club. These cookies would have made for a delicious breakfast.

Mon-leftover fajitas, beans(made way to many beans for just one meal)
Tues-chicken cobb salad
Wed-penne with homemade tomato sauce, salad
Thurs-Turkey meatloaf muffins, green beans
Fri-bbq chicken pizza (TJ’s pizza crust)
Sat-chili party with friends
Monday: Oven baked bbq chicken, mashed potatoes, veg
Tuesday: Spaghetti squash with chicken sausage, apples and onions
Wednesday: Coconut chicken fingers, oven fries and roasted acorn squash
Thursday:Cheddar lentil casserole, salad
Friday: Re-do of company dinner last week- Balsamic Pork Loin, butternut squash risotto
Saturday: Girl’s weekend so the family is on their own! But looks like there will be lots of yummy leftovers to hold them over.
Monday- Turkey white bean chili
Tuesday- Huevos Racheros
Wednesday- Baked Ziti
Thursday- Grilled Sausage and baked potatoes
Friday- Leftovers
Saturday- Quesadilla using leftover shredded chicken
I still haven’t decided which day I’ll make which meal. Just guess I’m flying by the seat of my pants this week!

Tuesday: Cheese enchiladas and Corn
Wednesday: Mandarin Chicken and veggie mix
Thursday: Fettuccine Alfredo and Broccoli
Friday: Chicken and Garlic Potatoes and Green Beans
Saturday: Out to eat
Sunday: Left Overs
Monday – Lamb Chops – Asparagus – Smashed Potatoes
Tuesday – Grilled Boneless Skinless Chicken Thighs – Broccoli
Wednesday – Polenta with homemade meat sauce – Salad

My plans – I travel a couple of days so will have some (??s) as my husband & daughter Grace fend for themselves!
Monday – leftover veggie soup from this weekend, crusty bread

Weds – leftovers and steamed artichokes
Thursday – traveling
Friday – traveling
Saturday – something good in the crock pot, I’m inspired by the other entries … and it makes leftovers for the coming week!
