Happy Thanksgiving! Yeah, I know I’m a few days late, but I decided not to work, blog or check email the last few days. It was wonderful. Not that I don’t love all of you!
But it sure was a nice quiet holiday.
I hope you all had wonderful feasts and more wonderful times with loved ones. And, I’m guessing, more than a few of you have oodles of turkey leftover. So, please share your favorite ways to use leftover turkey! I’ve got TONS and I don’t want it to go to waste!

PS – We did in fact cook the turkey in brown paper bags and it worked great! We needed to cook it a little longer than we did, but other than that, it was a super technique. I definitely recommend it!

Had to laugh. After doing my meal plan this week, I decided I was in a meal plan rut, so I thought I would check out what you had planned. Turns out out plans were pretty similar
Monday – Turkey Pot Pie
Tues – Turkey Rice Soup
Wed – Tacos
Thurs – Spaghetti
Fri – enchiladas
Sat – more turkey soup, cornbread
Sun – lemon pepper chicken, mashed potatoes
Turkey on a bun with dressing and cranberries … mmmm
or
Turkey hash (mashed potatoes, turkey, dressing mushed together and fried) toppped with a poached egg … some veggie on the side …. mmmm … we LOVE hash … roast beef hash is also a favourite around here.
or
Turkey soup … I also freeze some of the turkey broth as well as some of the smaller bits of meat in some broth (so it stays nice and moist and doesn’t get freezer burn) for a soup later … for some cold winter afternoon.
Our turkey pot pie is made with biscuits on top … yum.

Wednesday- Italian Chicken Chili, salad, homemade bread
Thursday-Christmas tree pizza (in honor of going to get our tree that night!)
Friday-Turkey sliders and sweet potato fries
Saturday-Birhtday Party
Sunday- leftovers and/or snacky foods for football game
We actually don’t have any turkey left! And I froze the leftover stuffing and things for a later dinner…
Monday: Detox salads! Large salad bar
Tuesday: Philly steak sloppy joes and homemade fries
Wednesday: Pasta with spinach, prosciutto and peas
Thursday: Teriyaki chicken meatball, edamame and snow pea stirfry
Friday: Eat out!
Saturday: Beef stew and crusty bread
I love how everyone moves from turkey to spaghetti. We don’t have turkey leftovers but somehow I do have lots of extra stuffing!
Monday – casserole with chicken breasts & leftover stuffing (using cream of chicken soup); artichokes
Tuesday – I have a dinner for work so it’s “fend for yourself” night
Wednesday – soup & sandwiches
Thursday – eating out
Friday – probably pizza
What a pathetic week! We were all sick and stayed in for the long weekend so we’ve been cooking for days … time for a little break I guess.
I like to make a turkey casserole, add veggies and cream of chicken soup and gravy to the turkey, then top with stuffing (lots of people like left over potatoes in it, not I) and bake. Easy and you use up almost all your left overs.
Monday: Surprise, cooking group
Tuesday: Super Nacho with Guacamole and salsa
Wednesday: Baked Teriyaki Chicken and fried rice and veggies
Thursday: my birthday, so take out of some sort
Friday: Queensland Chicken and Shrimp and Green Beans
Saturday: Left Overs
Sunday: Macaroni and Cheese and Apples
Turkey ideas…We won a 19.5 lb turkey so we have a lot of turkey yet to eat…so far we’ve had…

Jane this is the BEST pot pie recipe I have EVER had. seriously. I would just switch out the chicken for turkey. ENJOY! Oh and no menu this week. The hubby is in Germany. We are going to eat cereal all week.
3-4 boneless chicken breasts cooked and chopped/shredded
1/3cup butter
1 cup chopped onions
1 cup chopped celery
1 small potato chopped into small bites
1/2-3/4 bag of your fave. frozen veggies
1/2 cup flour
1 tsp salt
1/4 tsp pepper
2 cup chicken broth
1 cup half and half (I use fat free)
1 refridgerated pie crust (you can find near the biscuits)
Melt butter; add onion and celery; simmer for 10mins over medium heat
sprinkle flour; add chicken broth; stir until smooth
add half and half; cook over medium; stir till thick and bubbly
add chicken, salt and pepper, veggies and potatoes.
pour into a lightly greased 11×7 casserole dish; sit aside
unfold pie crust, press out the crease, use 1 tsp flour to help you roll it out to fit the dish,
place over the mixture.
Fold under the extra dough and crimp the edges with your fingers.
Cut 2 slits in top of dough.
Bake at 400 for 30mins
*if edges brown too much cover them with foil.

Turkey Sopa–my mom’s way of using up those leftovers. Its basically a white sauce chicken enchilada done casserole style. Just mix a can each of cream of mushroom and cream of chicken soups, 3/4 c. evaporated milk, can of chilis, & chopped turkey. then layer quartered corn tortillas, the turkey mixture, and cheese (wee love pepper jack, but you can just use cheddar). Cook about 30 minutes at 350 degrees.

Thurs–Leftovers
Fri–Chicken nuggets and potatoes for the kids, Date night for us!
Sat–Steak and rice pilaf
Sun–Tacos
We’re over the turkey leftovers; we’ve moved on…. sorry Jane!
-Mon: Cheese enchilladas and side salad tostadas
-Tue: Grilled marinated Greek style chicken, rice pilaf, and Greek salad (tomatoes, cucumbers, olives, red onion, feta, and a little romaine) tossed with oil and vinegar.
-Wed: Grilled pita bread, grilled veggies, hummus and pinenuts with leftovers from Tuesday.
-Thursday: Homemade pizza calzones & breadsticks, with vegetable crudites
-Friday: leftovers
-Saturday: Chicken tortilla soup with homemade guacamole and salsa with chips; Fresh pineapple or fruit
I have a lot of fond memories of my dad making us turkey sandwiches with a cranberry sauce/mayo concoction. It’s pretty good.

My mother in law made a delicious turkey noodle soup, same as chicken noodle but substituting turkey and using fettucine noodles. It was so refreshing after all the heavy stuff from the day before.
Sun- sbarro pizza from the LV airport. blech.
Mon- BBQ chicken and roasted veggies
Tues- ravioli with butternut squash pasta sauce
Wed- chicken enchiladas
Thurs- chili with jalapeno cheddar cornbread
Fri- out
Sat- dunno yet
i have a recipe on my blog (for cooking with kids) for little pies with apples and fennel. shred some turkey and substitute that for the ground turkey in the recipe. delish!

and, share my menus for the WEEK?!?!?! well, you see, er, i’m not the sort of person who can plan that far in advance. but, you’re a rockstar for being that sort of person.
I usually make this salad with chicken, but it works with turkey, too.
Just toss the ingredients together. It’s fast and simple and even the kids like it, believe it or not!
spring greens salad mix w/spinach leaves
water chestnuts
chopped up turkey or chicken
crunchy chow mein noodles
kraft Asian dressing
(optional, toss in a sprinkle of mandarin oranges)
(If you want to put a different, non-Asian, spin on it, substitute the Asian dressing with a raspberry vinaigrette dressing and add fresh sliced strawberries.)

love love love all the menus! funny how popular spaghetti is this week….I think we’re all sick of cooking after thanksgiving!
I made emeril’s turkey tetrazzini so far…it was great! I changed the recipe up a bit – used olive oil in place of butter and bread crumbs instead of potato chips. it was a yummy dinner!
Since we went to ‘someone else’s’ house for Thanksgiving and flew out the next morning I am mourning not having any turkey and stuffing leftovers. Not sure my husband will be happy but I am cooking a turkey this weekend!!!! With all the trimmings. Thanks for the leftover recipes – I’ll use them next week.
