Phew! I used up almost ALL of the turkey (my mom bought a 24-pounder, so that was quite a feat, let me tell you). I’m so proud of myself. And, even though I’m ready to move on from turkey, we weren’t even that sick of it. Good job, Jane, with creative leftover usage!
The last thing I made was Turkey Pot Pie (thanks to Heather for the recipe). I modified a bit – I used gravy instead of stock and flour, and cream & white wine instead of half & half (that’s what I had on hand and wanted to use up). The sauce was heavenly and the pot pie came out GREAT.
I am feeling quite uninspired this week. Please share your menus – I really need them!

Mon: Turkey Leftovers (just to clarify, my hubby was crying his eyes out that we didn’t have any leftovers b/c T-day wasn’t at my house so I made a crock pot turkey breast today…am I crazy or what!)
Tues: Tacos, homemade salsa
Wed: spaghetti, salad, crusty bread
Thur: I work–who knows what goes on here
Fri- Baked Mac-n-cheese, chicken fingers (or turkey)
Sat- Tin Foil Dinners
Sun- Chicken Salad w. Cilantro Dressing, yummy Costco Tortillas

This is what I am going to attempt to make this week. Not sure what day for any of it….
Baked Ziti with Chicken, salad, bread (enough for 1 night of leftovers)
Quiche with bacon, spinach, red onions
Italian Chicken Stew, steamed veg, bread (enough for 1 night of leftovers)
Chinese Take out
Hopefully I will be more organized next week.
Jane, good luck with the frittata. I have tried twice and havent been very successful. I do better with quiche. What I have learned you need to be patient….

Salmon is always are go to meal. But we took some banana squash yesterday and cubed and cooked in water and then blended. I don’t know why that is so good, but it is! I tried to do oven fries, but I am missing something. Anyone have a good recipe.

My plans for the week:
Monday – leftover homemade Mac & Cheese, artichokes (this is now my 3-yr-old daughter’s stated ‘favorite vegetable’ so you will see more of these on the list than usual!)
Tuesday – leftover meatloaf, baked potatoes, salad
Wednesday – last of the leftover Mac & Cheese, green beans
Thursday – grabbing something on the go (it’s preschool Christmas Program night!)
Friday – some kind of chicken? how vague is that!
