Week 116 Menu

Happy Easter!  May your day be filled with baskets, loved ones and chocolate.

MONDAY:
- Leftovers

TUESDAY:
- Pork Chops
- Wild Rice (Rice-a-Roni, please!)
- Veggie

WEDNESDAY:
- Paninis of some sort (Cate just gobbles these up!)

THURSDAY:
- Canneloni (I need to use up the ricotta cheese!)
- Salad

FRIDAY:
- Orange Chicken
- Dumplings

SATURDAY:
- Eat out

SUNDAY:
- Lentil Soup
- Crusty bread

It may be a holiday today…but that doesn’t mean you don’t need to eat this week!  Plan a menu and share it with the rest of us! (PS – Thanks again for your menus each week!!!!)

    Monday: Black Bean Soup with Fry Bread
    Tuesday: Rosemary Tilapia and Potatoes and Peas
    Wednesday: Salerno-Style Spaghetti and Salad
    Thursday: Chicken Fried Rice
    Friday: Tacos with Guacamole
    Saturday: Pot Roast with Carrots and Potatoes and Tres Leches Cake
    Sunday: Left Overs

    Today it is rainy, but after that the rest of the week is beautiful, so I will be taking advantage of that and doing some grilling!

    Sunday: Garlic Basil Roasted Chicken, Baby Red Potatoes, Green Salad w/ Asparagus, Individual Blackberry Lemon Trifles
    Monday: Cucumber Garlic Chicken, Jasmine Rice
    Tuesday: Leftovers
    Wednesday: Grilled Burgers, Sweet Potato Fries, Fruit
    Thursday: Homemade Pizza on the Grill
    Friday: Date Night
    Saturday: Leftovers

    S-no plans for a traditional easter dinner… it’s too hard to feed 2 on Easter so making Lemon garlic peppered scallops with pasta

    MONDAY Pineapple-Glazed Chicken; Green Beans & Walnuts
    TUESDAY Grilled Flank Steak in Garlic-Herb Marinade; Twice Baked Potatoes
    WEDNESDAY Pork Chops w/Apple, Leeks & Fennel; Baked Sweet Potatoes
    THURSDAY Baked Cheese and Tomato Macaroni; salad
    FRIDAY leave for weekend to go celebrate my grandmother’s 80th birthday!

  5. I just wanted to say HAPPY EASTER and thanks for this blog. :) You keep me motivated. Right now though, my brain is so full of fixing Easter dinner that I can’t think about the rest of the week.

    Wed – chicken tortilla soup and cheese quesadillas
    Thurs – leftovers
    Fri – baked potatoes
    Sat – breakfast (waffles, eggs, bacon)
    Sun – homemade pizza

    Wed: Balsamic chicken, garlic spinach and couscous
    Thur: Spaghetti squash with tomatoes and feta, salad
    Fri: Meat pies (with turkey and mushrooms), veggie
    Sat: Veggie burgers, sweet potato fries
    Sun: Peachy chicken, potato mash with peas, carrots and corn

    Am I the only one with about 5 pounds of leftover ham?!? I will be doing lots of ham sandwiches this week, mostly for lunch though. Happy Belated Easter to all and spring can officially come to the east coast any time now!

    Monday: Bistro chicken (left over from weekend), brown rice & broccoli
    Tuesday: Easter leftovers (ham, potatoes, corn)
    Wednesday: Reuben sandwiches
    Thursday: Stir fry chicken with penne pasta & veggies
    Friday: Pizza
    Saturday: Pasta e Fagioli soup (from our freezer, made last month)
    Sunday: Something else from the freezer – still clearing it out! We move on April 30 so I’m all about using up anything already here over the next couple of weeks.

    Wed — Stacked enchiladas
    Thurs — Cheddar-baked pollock, fries, peas

    Sat — Leftovers
    Sun — Easter dinner (I always post comments on my PREVIOUS week’s dinners: Ham, cheesy potatoes, asparagus, hidden pear Jello, and a pretty pastel pink and very tall “Raspberry Diner Cake” from Safeway

  13. My menu for the week consists of eating all the leftovers from 2 Easter brunches, and sprinkling it w/some good veggies here and there:)

  14. M – Breakfast night featuring scrambled eggs made by our 5yr old who learned how to do it in preschool!
    T – Chicken Tortilla soup with fresh avocado, lime and cilantro.
    W – Crunchy lemon chicken with snow peas and sticky rice
    Th – Enchiladas, Mexican rice, sliced avocados, fresh salad & refried beans.
    F – Egg salad sandwiches, carrot sticks & peanut butter yogurt dip.
    S – Chicken & Dumplings, Fresh cut fruit
    Su – Homemade pizza night

    Tuesday – gnocchi with homemade pesto and leftover ham
    Wednesday – Veggie pasta with peas and leftover ham
    Thursday – Sockeye Salmon from Trader Joe’s (bought frozen) over homemade pesto, tomato slices and puff pastry (one of my favorite, quick, easy Giada recipes – http://www.foodnetwork.com/recipes/giada-de-laurentiis/salmon-with-puff-pastry-and-pesto-recipe/index.html)

    Friday – sushi date night
    Saturday – Pasta with homemade marinara sauce
    Sunday – grill

    thanks for prompting me to plan our meals for the week, this is a new concept for me but I’m loving it!

    Wednesday: whatever my flat mate will make
    Thursday: dinner at one of the girlfriends
    Friday: tapas
    Saturday: dunno about dinner yet, spelt pancakes with cinnamon-baked apples for breakie
    Sunday: Sushi, I’m giving sushi workshop again:)
