Let’s Lunch! (and let’s make it GOOD.)

I only have three batters in my lunchtime line-up: PB & Honey/Jam, Chicken Salad, and Grilled Cheese. PB & Honey is batting around 1000 right now, which I suppose is good for his career, but I’m kind of sick of him stealing the spotlight.

Even when I’m not in a PB & Honey rut, I dread lunchtime.  I always have…in college, at work and at home. It’s just hard to come up with something fast and easy but still tasty.  Oh, and I suppose healthy would be good too!

Do you get in a lunchtime rut?  Or do you have some great lunch ideas?  I need inspiration (and I’m probably not the only one)!  Lunch is three hours away…so get your comments up here stat!

    Pita pizza are good and pretty easy.
    bean and cheese burritos (no other fillers to keep it easiest!)
    Progresso soups are good
    Hmmm…now I am getting hungry!

  2. I will do my best to help you out:) I like PB, honey and banana sandwiches on whole wheat, but I know they can get old too:) Here are some random ideas:

    I usually take a look at what extra produce I’ve got and try to create something quick out of that. Sauteed veggies roasted veggies (in the toaster oven) tossed with some pasta and seasonings and topped with cheese. I like to have feta, cheddar, fresh mozzarella, parmesan, and asiago on hand.

    We make egg salad sandwiches, nachos, tuna fish and chicken nuggets A LOT. I like to have spinach tortillas on hand and do chicken caesar wraps a lot too. You are so right though–lunch is tough. i loved it when i worked full time and was always going to new restaraunts–not as exciting now (but with better company:))

    Lunches at our house are exactly as at you house! In fact, your picture looks exactly like my counter when we have lunch (just substitute the honey for jam): Milton’s 100% Wheat Bread and PB&J. Sometimes I get creative and put celery in the chicken salad! One variation is to have Trader Joe’s Tomato Soup with toast or grilled cheese. I like to add a fruit on the side to increase the health factor. Overall, I am pretty boring when it comes to lunch. It is hard to find something that is affordable, the kids enjoy, and is easy to prepare! Can’t wait to read more comments!

  6. My husband and I almost always have leftovers from the night before. Our kids usually prefer quesadillas (like 90 percent of the time) or peanut butter sandwiches. Eggs are another quick and easy lunch. Scrambled or fried with toast, or I like to wrap scrambled eggs up in a tortilla with cheese and salsa (when I make them for my kids they like ketchup instead of salsa). Sometimes we make mac-n-cheese for the kids. The rule in our house is that they have to eat what is offered for dinner, but they can choose what they want for lunch. So most days it’s always the same thing. Oh, and we always have fresh fruit with our lunch.

  7. the quickest one i have (and also very yummy!)are whole wheat tortillas (baked for a moment on a dry pan) with fresh spinach, feta cheese and scrumbled eggs. Or buckwheat pancakes with cream cheese, smoked salmon and some salad. hmmm also a toasted ciabatta bread with mozarella, tomato and some pesto or just fresh basil. 🙂 good luck!

  8. I think air-popped popcorn, sprinkled with cheddar cheese is a great lunch. Just add some apple slices or carrot sticks and I think it is a balanced meal. Isn’t it?! I pump up our PB and J with banana, apple or pear slices on the peanut butter- so yummy!

  9. I have the lunch time problem too. My biggest problem is that unless the kids are off or sick, it’s usually just me. So I hate to cook up something or make a big mess just for me. I eat a lot of leftovers or a can of soup or a peanut butter/banana/fluff or chocolate chips sandwich or chicken salad sandwich. My other problem in addition to being lazy, is that a lot of times, nothing sounds good to me.

    PB&J and PB&Honey are my favorite lunchtime meals! I eat them all the time.

    Wheat toast with canned albacore tuna fish, tomato and sliced avocado (no cheese!) is also really quick and tasty.

    Trader Joe’s sells bags of snap peas and baby carrots, that’s a quick and healthy way to get some veggies in and cut the chips out.

    The thing I hate about working is making lunches that morning. I always stick with the same old lunch. Turkey on wheat and a piece of fruit and pretzel crisps from Costco. Very boring – and I always think I should have a salad but can’t get excited about that at lunchtime.

    I love tuna salad (white albacore, mayo, lemon juice, salt & pepper, celery, green onion or chives) on a toasted ciabatta or sliced baguette open faced. Sprinkle with cheddar cheese and slivered almonds and toast in the oven for 10 mins until cheese is melted.

    Lunch has always been such an annoying meal to me! What I really dislike is the clean up afterward. Anyway, one thing I do every now and then that we like is I’ll make a platter with various crackers, cheeses and something like salami and let my kids mix & match. I’ll typically make another platter with different fruits cut into chunks and give them toothpicks and they love to spear them. I think they get more fruit that way cuz it’s fun!

    Also I agree with Brytt’s idea about air popped popcorn — we do that sometimes (always with butter & sea salt!) and I pair it with fruit slices of some sort. Popcorn and fruit may not seem like much of a lunch but it is filling and my boys love it. Okay, I like it too!

    Im’ a little late on this but, whenever I make baked potatoes, I just cook up a few extra, throw ‘em in the fridge and warm them up for lunch! Quesadillas with vegetarian refried beans are good! Smoothies are a great meal replacement and a good way to get in fruit and vegetables!

    My sister shared with me a new tuna salad recipe that we all love– tuna, mayo, tomatoes (chopped), green onions, cashews (chopped). I put it on a piece of toast and top with salt and pepper… SOOOO good!

    I make a pot of soup once or twice a week and that’s lunch. Along with bread or half a sandwich instead of the bread and fruit it’s healthy, filling and cheap. Sometimes raw veggies or a small salad are added.

    I am a little late on this. I like all the comments and the ideas. We like to have tuna sandwiches. My daughter doesn’t like PB so it makes it a little hard. She does love bean and cheese borritos. We also will have ham and cheese cut up with crackers. Also a good change for a ham sandwich, and tuna is to have it rolled up in a tortila shell.(it also cut down on the calories for me) My oldest loves this and it is easy enough for him to make on his own. We always have some fresh fuit or a fruit salad with lunch.

    We have three lunches also–grilled cheese and tomato soup (sometimes tuna melts), quesadillas (refried beans and cheese), and pasta with TJ’s pesto sauce and TJ’s turkey meatballs. Looks like you have some great ideas here–I so needed them!!

    If y’all like cottage cheese, we like a half of a pear with a scoop of cottage cheese and a bit of grated cheddar on top.
    (I use canned pears, which are easier to eat for the kids)
    It would work with a peach too.
    I love the popcorn idea. I used to put that in my kid’s lunches instead of chips.

    Hi! Just visiting your great site for the first time today. Love it. I work from home everyday so I have major lunch issues. Here are my two staples:
    -Scrambled egg, cheese & ham sandwich. Make a scrambled egg in the microwave. Put it on wheat bread with cheese and a slice of ham. Grill. Use egg beaters and low fat cheese and you’re good to go.
    -Spinach quesadilla – corn tortilla in a pan, slice of muenster cheese, big handful of spinach, fresh cilantro, salt and pepper

    Lately I’ve been eating a veggie burger on a bun with ketchup, mustard, and a slice of cheese; I’ll have either homemade baked sweet potato fries with it or an avocado half. I’ve been eating an avocado half with my lunch most days for the past month and a half and it keeps me full for a long time. I’ll also have grape tomatoes. And on days when I need a change, I’ll have one of Amy’s frozen Indian dinners. They’re delicious! And a couple of weeks ago for a few lunches I had a spinach salad with a boiled egg, pecan halves, avocado, tomatoes, cooked green beans, and lemon vinaigrette. I got the recipe from that vegetarian list from Everyday Foods.
