Meatless Eats

I’m not a vegetarian and I don’t plan on becoming one.  But I have thought a lot about eating less meat lately…both for economic and environmental purposes.  Seriously, if we all ate less meat the impact on the enviornment would be huge.  But I won’t get into that.  Needless to say, I’m excited to incorporate more meatless recipes into my dinner repertoire.  I’ll keep you posted on my progress.

  1. I can personally vouch for the bean burritos and vegetable enchiladas on their list. I love them and they are two of my husband’s favorites. They make plenty for the freezer/leftovers too.

  2. We went mostly meatless last year for economic/environmental reasons. I hardly ever eat meat anymore, although we do occasionally eat it when we go out. At first I was nervous about what to cook but I’ve found a lot of great ideas out there. There’s a websited called Meatless Monday that publishes new recipes each Monday. Even designating one meatless day each week can help a lot. Definitely keep us posted on how it goes!

  4. Huzzah! I’m so excited, I couldn’t stand meat when I was pregnant, and want to stay off of it as much as I can now that it is no longer on the verboten list. Thanks for this great help!

    A couple of months ago I decided to go more meatless for environmental reasons too. The amount of energy it takes to produce one serving of meat can product 11 servings of veggies/grains/fruit according to a New York Times article. I’m eating dairy and eggs, but have switched to soy milk for drinking. The only time I eat meat now is when I’m eating out. I have found so many delicious recipes, mostly from cookinglight.com, that we don’t miss the meat and we’re eating so many more legumes and vegetables. It feels great! I’m glad other people feel the same way!

  8. Oh thank you for the meatless. I’m honestly trying to go vegetarian but it’s hard in a meat world.

    Love EDF! We decided to eat less meat at the beginning of the year and focus more on vegetables. I haven’t missed meat (we still eat it a couple times a week) and preparing meals is easier when I don’t have to worry about if the meat is cooked through or about contaminating other foods with raw meat. I also like that we are lessening our impact on the environment.

  10. Right on! I’m trying to do that, too. One of the upsides is we end up eating more vegetables, so in addition to making good economic and environmental sense, it’s also healthier!

    Even when we do eat meat, I’ve been trying to use it more as a flavoring element than as the main attraction.

    Strangely, I am now craving a hamburger.

  11. I plan a meatless recipe once a week. It saves money and time for me because veggies take a lot less time to cook than meat. Meatless meals are my easy cooking nights. There are so many great recipes out there.
