Happy Memorial Day Weekend!  Sorry I haven’t shared any fantastic food ideas with you…I’ve been too busy enjoying the weekend and drinking yummy smoothies prepared by Nate.

MONDAY:
- Paninis (I know we’ve been having these a lot lately, but Cate actually EATS them, so gotta go with it)

TUESDAY:
- Ricotta Pasta with Tomatoes al Forno (Rachael Ray 365: No Repeats) – thanks Courtney, I have that cookbook, and this sounds delish – gonna give it a try!

WEDNESDAY:
- Tacos

THURSDAY:
- Leftovers

FRIDAY:
- Breakfast for dinner (didn’t do that last week)

SATURDAY:
- Eat out

SUNDAY:
- Chicken Caesar Salad

    Mon- Chicken Lettuce Wraps
    Tues- Porcupine Meatballs
    WEd-pork chops/ mashed potatoes (or Leftovers)
    Thurs- I work (cereal probably at home)
    Fri- dinner with friends
    Sat- chicken salad croissants
    Sun- chicken salad w. creamy tomatillo dressing

    Back to reality for us this week after a week of vacation. I’m trying hard to motivate myself to stick to meal planning!

    M – burgers and fries
    T – chicken salad sandwiches
    W – bbq sandwiches
    R – pasta w/meatballs and garlic bread
    F – leftovers
    S – frozen pizza
    S – some kind of pasta dish

  4. Monday: Pan Seared Chicken with Tomato, Basil and Caper
    Tuesday: Rosemary Garlic Tilapia with Potatoes and Peas
    Wednesday: Chicken Teriyaki with Stir-Fry Veggies
    Thursday: BLT’s
    Friday: Huevos Rancheros and Fresh Salsa
    Saturday: Hot Dogs on the Grill
    Sunday: Family Barbeque

  6. Mon – Taco rice(lots and lots of leftover taco meat from the weekend)
    Tues – homemade pasta
    Wed – Taco soup & corn bread
    Thur – Homemade Hawaiian Pizza & Cake (Anniversary cake, still looking for a good eggless cake recipe!)
    Fri – Pho noodle salad

    Tues: roast with mashed potatoes and gravy
    Wed: out to eat
    Thurs: homemade pepperoni pizza
    Fri: lime chicken fajitas
    Weekend: need inspiration!

  9. first time posting my menu, hopefully many more to come.

    Sun- BBQ rib, corn bread, bacon ranch pasta salad
    Mon- Grill Shrimp and scallop, left over corn bread and salad
    Tue- Taco night
    Wed- Left over
    Thurs- Spam fried rice, steam mussels.
    Fri- Bring your own meat BBQ with friend (ribeye for us)
    Sat- Chicken alfredo, blue cheese and pear salad, garlic bread.

    Turkey burgers with cheese and sauteed mushrooms
    Jerk Salmon with spinach salad
    Teriyaki chicken/veggie rice bowls
