Week 128 Menu…and Happy Fourth of July!

Hope your Fourth was filled with flags, food and fun! Ours was filled with all three, especially food.

Nate and I cooked up quite a feast! Potato salad, fruit salad, corn on the cob and RIBS. Ah, the ribs. Nate spent hours manning the grill and the result was amazing! Click here for the BBQ sauce recipe.

I’m not going to be very gourmet the next few weeks…the Swiffer SocialLuxe Lounge is almost here and we are BUSY getting ready!

MONDAY:
- Rachel sandwiches

TUESDAY:
- Spaghetti
- Salad

WEDNESDAY:
- Chicken Cordon Bleu (from grocery freezer section)
- Rice & Veggie

THURSDAY:
- Lasagna (with Barilla no-bake noodles)

FRIDAY:
- Leftovers

SATURDAY:
- Eat out

SUNDAY:
- Quesadillas

  1. This week is unusual because I don’t really have a set menu. I bought quite a bit of produce at the greenmarket this weekend — from that, I’ll figure out what to make as the days progress. This week’s haul: fromage blanc, eggs, ricotta, cavolo nero (aka black cabbage), herbs, potatoes, radishes, Japanese turnips, cod, tomatoes, summer squash, a levain boule, butter and fava beans. In addition I have some leftover shrimp from Friday and a head of sucrine.

    Sunday (tonight): pan-roasted cod, tomato and cucumber salad

    Monday (July 6): shrimp with garlic and parsley (w/ bread to soak up the sauce); radish and cucumber salad, with fromage blanc and croutons

    Tuesday (July 7): I was thinking I might do fava bean risotto. Alternately stew the beans and stir in some prosciutto and chopped sucrine.

    Wednesday (July 8): Depending on what happens Tuesday, it might be a tomato and squash gratin, and a three-egg omelette. Or maybe greens with pancetta, tossed with pasta.

    Thursday (July 9): Could very well be leftovers.

    Friday (July 10): Probably soup and salad. I have a feeling it’ll be some kind of summer minestrone, using leftover vegetables in the fridge, dried beans and pasta.

    Saturday (July 11): Depends on what looks good at the market.

    This is all subject to change. I stick to my menus about 75% of the time but it also depends on the phase of the moon. :)

    w/ pecans, apples & apple cider syrup & scrambled eggs)
    Tuesday: Green Chile Chicken Enchiladas & Black Bean Corn Salad
    Wednesday: Cucumber & Cream Cheese Sandwiches, fruit & chips
    Thursday: leftovers
    Friday: Homemade Margherita Pizza
    Saturday: ??

  3. Monday: yellow squash casserole, salad, fresh bread with herb butter
    Tuesday: Sausage and pepper calzones
    Wednesday: nacho chicken bake, rice, veggies
    Thursday: Roasted vegetables with couscous, feta and fresh herbs
    Friday: Leftovers or out
    Saturday: Taco salad
    Sunday: Something on the grill!

    Monday–Chicken stirfry (made with leftover chicken and brocolli), Rice
    Tuesday–Sandwiches, potato chips, fruit
    Wed–leftovers–Clean out the fridge night
    Thurs–Vacation for the next 10 days!!!!! Yay for no menu to plan :)

    Tuesday: Chicken tetrazzini with salad or broccoli
    Wednesday: Pork chops with rice/potatoes, broccoli or frozen veggies
    Thursday: Spaghetti
    Friday: Pizza
    Saturday: Quiche (frozen pie crust), with Farmer’s market veggies and cheese
    Sunday: Crepes (zucchini, chevre, shallot) and plain cheese for kids

    my key lately is to have one or two meals be recipes that I know by heart, such as Chic. Tetrazzini & Quiche.

    –fish tacos
    –braised chicken, polenta, caprese salad
    –chiang mai style curry noodles
    –lamb madras, naan, mango lassi

    Wednesday- Grilled steak tacos, jalepeno poppers, jello salad and fresh pico
    Thursday- Brats, oven fries and fruit
    Friday- spaghetti with meat sauce, French bread
    Saturday- Pesto Fettucine w/ chicken, fresh bread and garden salad
    Sunday- BBQ chicken Pizza, green salad and fruit
    Monday- BLT’s with avocado fruit and fruit dip
    Tuesday- Breakfast- maybe waffles or omelets
