Well, our week on Cape Cod is over. The time passed far too quickly, but at least we went from one beautiful place to another. I’m with the girls visiting my family in New Jersey for the next week. My parents are currently living on a farm with horses galloping everywhere you look. This is the view off the back porch. Pretty close to heaven, right?
We’re not back to normal life yet, but we are going to be doing some cooking, so I’m planning a loose menu. Here goes!

My meal planning has been challenging. My wife doesn’t have a ‘fridge at work now (and gets free lunch), but I still need leftovers. So I am trying to make about 5 meals dinners to last the week.
1 – spag with meat sauce, grilled garlic bread, corn
2 – bbq chicken breasts, salad
3- veggie and tofu stir fry over rice
4 – home-made pepperoni calzones, salad
5 – black bean enchilladas, corn

And even though it is summer, I made an acorn squash soup with mint a few times… and it is great (especially with crackers or some bread).

- Thursday: Marmalade Chicken Tenders (Eating Well), rice, fresh green beans
- The rest of the week/weekend I’ll have guests in and we’ll be out and about!

Hi, my first post (comment) as I just found your blog today. I pretty must do the cooking at our house. I know my wife appreciates it, and it is my contribution to our household. I look forward to seeing what others are cooking, as I want to try to make things a bit healthier, and also clip down the food bill, as we have a big Mt. Rainier trip next year to finance.

Monday: sauteed mung bean sprouts with mushrooms and tofu, brown rice
Tuesday: lime grilled shrimp w/ wheat spaghetti, tossed in extra virgin olive oil and plum tomatoes (experimenting, i’ll let you know how it turns out)
Wednesday: veggie burger, steamed broccoli
Thursday: broccoli and tofu stir-fry, fried veggie brown rice
Friday: artwalk, dining out, hopefully italian!
Saturday: leftovers/fridge clean and sweep
for a light dinner, maybe grilled salmon/chicken caesar salad, or a caprese sandwich?
Loved posting last week’s menu — I’m back for more! It was 109 here in Seattle last week so a few of my meals were pushed back due to the heat. There’s something about cooking in a 90 degree house that just isn’t going to happen!

I’m throwing a baby shower for my sister-in-law on the 15th. Half of the ladies are vegetarian so I’m making wraps. Some with veggies and some with chicken and veggies. I’m still planning the sides but a fruit salad is a must.

I didnt know Jersey could be so beautiful. Family Fun had a recipe for individual Taco salad bowls. They were really cute and easy. I’m Still not sure about Wed and Thurs meals, I may just make those myself. We’ll see how it goes.

My little one has swim lessons at 5 each day and hubby on call at hospital so strange week for cooking hence the meals out….

I am leaving for FLA for the week as I will be moving there in a couple of weeks.
Try Stonewall Kitchens Mango Chicken salad wraps. I didn’t have their chutney, but substituted Major Greys. Also added additional fresh mango & chopped chives from the garden. Served with grilled vegetables (also made ealier in the day and chilled topped with a viniagrette). Enjoy the rest of your vacation
This is breakfast week at my house! (we get into the mood for this every once in a while…)
Monday: french toast with fresh berries.
Tuesday: Yogurt parfait with the rest of the berries and homemade granola
Wednesday: Scrambled eggs with pesto and fresh ricotta
Thursday: French rolled omelets with gruyere and salad
Friday: out to dinner!
Saturday: Not sure yet.
Sunday: Mom’s birthday dinner! Still evolving this one, but will probably have to break with the breakfast theme. I’m guessing pasta for a crowd.

This coming weekend for those who may be in the eastern PA area, it’s “Musikfest” in Bethlehem, PA, one of the largest musical festivals in the country with of course great music but also loads of yummy food! It’s free to go and lots of the music is also free…we’ll be browsing all the different booths and trying lots of things.

WOW, lots of great menus out there. Love the ideas on the light dinners (salads, wraps, sandwiches). As for something lite, I like making small appetizers or a lite salad and combining them into a meal. Some of my favorites to make: rosemary pinwheels (made with store bought Cresent rolls with a mixture of cream cheese, parmesean & rosemary in the center, very easy recipe), meatballs, cucumber sandwiches, asian chicken salad (my favorite). Good luck! Here is my menu:

Tue- out
Wed- flying solo, huby is out… i’m thinking of ordering thai.
Thu- steak, green beans and orzo salad

I found your blog a few weeks ago, and I’ve thoroughly enjoyed reading the different posts. Even more importantly, it provided the necessary kick in my caboose to get me to create a weekly menu that’ll go a long way towards making sure I feed my family in a manner befitting the most important people in my life.

Sun – Cocido, (a Mexican soup) with a side of rice and a salad
Mon – leftovers
Tue – Lemony, pan-fried chicken cutlets with a salad
Wed – Cheese enchiladas with a side of steamed zucchini
Thurs – Baked penne with a zucchini salad (Our neighbor’s zucchini plants are hitting their stride.)
Fri – Crock-pot bean soup with corn muffins, and sliced tomatoes
Sat – Marmalade-glazed baked chicken drumsticks with side of mac/cheese and steamed green beans
Hubby’s out of town the first part of the week, so easy food!
Monday: Mac and Cheese and Apples
Tuesday: Chicken and Rice and Peas

Wednesday: Pool Day….Amy’s cheese enchildas, blue corn chips and salsa and fresh pineapple circles
Thursday: tofu and veggie stir fry with quinoa.
Friday: Tacos, guacamole and chips, black beans, lavender lemonade with strawberries
