My mom put together a lovely summer feast for my sister-in-law’s baby shower yesterday. I ended up running around getting the shower games ready and didn’t do a lick of cooking!
The menu was full of much yumminess, including beautiful fruit and chicken salad sandwiches. I forgot to take a picture of the salad that called for onion juice, but I put the recipe up on the Side Dishes page (called Jenny’s Green Salad). I’m pretty sure my mom just left the onion juice out, but that’s because we made the dressing before we read your tips and reassuring comments. Next time maybe we’ll give it a try! Thanks to everyone who shared light dinner ideas last week – they were great and I’m going to incorporate them into my regular weekly menus as well!
So, last week’s menu was a BUST. We did have Chicken Croissants, but that was the only thing planned that we ate. Planning and vacation just don’t go together! So, here is my more realistic vacation meal plan.
MONDAY:
- Driving back up to Massachusetts at dinner time
TUESDAY:
- Probably driving to New Hampshire at dinner time
WEDNESDAY:
- If we didn’t drive to NH on Tuesday, we will be on Wednesday!
THURSDAY:
- Maybe I’ll try to make something for my in-laws…perhaps Green Noodles?
FRIDAY:
- Maybe hot dogs and hamburgers?
SATURDAY:
- Maybe eat out?
SUNDAY:
- Maybe my mother-in-law will cook us a Sunday dinner feast?
I am being SO helpful with giving you ideas. Yeah right. PLEASE PLEASE PLEASE share your menus! You really need to give each other ideas since I’m NOT. Remember…if you have a menu planned, we want to see it! It can be simple, it can be fancy…doesn’t matter!

Success and failure with last week’s menu.
HUGE SUCCESS: Martha Stewart’s Beef Bulgogi. My husband is already asking to have it again. HUGE FAILURE: Martha’s Simple Meat Sauce. I hated it…we thought it was so awful, we had hot dogs instead. It was that bad.

we leave for vacation sunday so the goal was to clean out the fridge and buy as little as possible:

Wed- breakfast for dinner – hashbrowns, canadian bacon & eggs
Thurs- grilled chicken, salad & red potatoes
Fri- more stir fry…
Sat- scavenge night/leftovers
I am also new (besides my snarky jimmies comment
) I am pretty terrible at thinking a head more than a few days when it comes to cooking dinner. I tend to hit a grocery store three times a week. I am hopefully going to use this as motivation to plan a week in advance. I figure I need to learn with me and my wife’s first little one on its way in Feb and often having to work late….so..here it goes:
Sun(well already did it but): Almond encrusted Porkchops, with smashed potatoes and peas
Mon: Chicken with fried noodles oyster/ bean sauce(experimental restaurant recipe replication.
Tues: Rehearsal, prenatal Yoga, csa pickup – Something fast with our newly acquired veggies. Most likely pasta stir fry
Wed: Pan fried steak with assorted fresh veggies
Thur: Shrimp Tacos night with fresh guacamole
Fri: Anniversary weekend up to NH with BBQ on the road
Sat: Anniversary weekend up to NH play it by ear
This is our last week before vacation – hooray!
Monday: BLT’s and corn on the cob
Tuesday: cheese tortellini with vodka sauce & shrimp
Wednesday: ice cream festival at our church!
Thursday: Taco night
Friday: Pizza night + eating anything left in the fridge before we leave for vacation!
