Week 133 Menu

My mom put together a lovely summer feast for my sister-in-law’s baby shower yesterday. I ended up running around getting the shower games ready and didn’t do a lick of cooking!

The menu was full of much yumminess, including beautiful fruit and chicken salad sandwiches. I forgot to take a picture of the salad that called for onion juice, but I put the recipe up on the Side Dishes page (called Jenny’s Green Salad). I’m pretty sure my mom just left the onion juice out, but that’s because we made the dressing before we read your tips and reassuring comments. Next time maybe we’ll give it a try! Thanks to everyone who shared light dinner ideas last week – they were great and I’m going to incorporate them into my regular weekly menus as well!

So, last week’s menu was a BUST. We did have Chicken Croissants, but that was the only thing planned that we ate. Planning and vacation just don’t go together! So, here is my more realistic vacation meal plan.

MONDAY:
- Driving back up to Massachusetts at dinner time

TUESDAY:
- Probably driving to New Hampshire at dinner time

WEDNESDAY:
- If we didn’t drive to NH on Tuesday, we will be on Wednesday!

THURSDAY:
- Maybe I’ll try to make something for my in-laws…perhaps Green Noodles?

FRIDAY:
- Maybe hot dogs and hamburgers?

SATURDAY:
- Maybe eat out?

SUNDAY:
- Maybe my mother-in-law will cook us a Sunday dinner feast?

I am being SO helpful with giving you ideas. Yeah right. PLEASE PLEASE PLEASE share your menus! You really need to give each other ideas since I’m NOT. Remember…if you have a menu planned, we want to see it! It can be simple, it can be fancy…doesn’t matter!

    This week I’m making:
    F – herbed chicken w/ roasted potatoes & corn
    S – grown up mac & cheese topped w/ tomatoes
    S – french fish in a packet a la moosewood
    M – soba w/ edamame & zucchini
    T – beef stew
    W – frittata
    T – leftovers

  2. Hubby gone again most of the week, I haven’t planned a very inspiring menu.
    Monday: Spaghetti and Salad
    Tuesday: Macaroni and Cheese and Apples
    Wednesday: Chicken Fried Rice
    Thursday: Oven Pizza and fruit
    Friday: Italian Crab Pasta Toss
    Saturday: Rosemary Garlic Tilapia and Potatoes and Salad
    Sunday: Left Overs

    Success and failure with last week’s menu.

    HUGE SUCCESS: Martha Stewart’s Beef Bulgogi. My husband is already asking to have it again. HUGE FAILURE: Martha’s Simple Meat Sauce. I hated it…we thought it was so awful, we had hot dogs instead. It was that bad.

    Fingers crossed for this week (all new recipes for me, because it’s summer):

    Monday: Rum-Glazed Shrimp and Mango
    Tuesday: Pasta with Proscuitto and Peas
    Wednesday: Chicken Pad Thai
    Thursday: Glazed Pork Tenderloin with Broiled Pineapple
    Friday: I think of Friday as my “cooking sabbath”

  7. Hi! I’m new – stopping by way of Meal Makeover Moms. Here’s what we’re having this week:
    Sunday~ Potato Torte
    Monday~ Pasta fagioli in the crock pot (I add ground beef to mine).
    Tuesday~ Barbeque Chicken, rice, cornbread and peas.
    Wednesday~ Soft tacos and quesadillas
    Thursday~ Leftovers from the fridge.
    Friday~ Pasta toss with shrimp or chicken
    Saturday~ Homemade pizza or burgers on the grill.

    Monday: grilled porterhouse steaks, aligot mashed potatoes (heaven!), Jersey tomato salad with balsamic vinegar and basil
    Tuesday: Tagliolini with Red Caviar
    Wednesday: Grilled chicken, orzo with cherry tomatoes and basil
    Thursday: Risotto with fresh mozzarella and basil
    Friday: Chicken salad with corn and goat cheese dressing.

    Did some of last week’s menu. some of it fell apart at the end of the week. read-tired/overwhelmed mama.

    So, here goes with a second try.

    Monday:Tofu and veggie stir fry with quinoa (a repeat but i bought the ingredients and didn’t use them. Ha!
    Tuesday: to Denver to meet my mom/eat out??
    Wednesday: Brown rice noodles with red sauce and veggie meatballs/garlic bread and green salad
    Thursday: Veggie Tacos with black beans and lavender lemonade
    Friday: My birthday!! Take out from Asian Palate Thai food???
    Saturday: time to myself to prepare a feast from Ani Phyo’s book of raw foods-a birthday wish…

    we leave for vacation sunday so the goal was to clean out the fridge and buy as little as possible:

    Monday- burgers (to use up some buns)
    Tues- stir fry w/ brown rice, egg drop soup
    Wed- breakfast for dinner – hashbrowns, canadian bacon & eggs
    Thurs- grilled chicken, salad & red potatoes
    Fri- more stir fry…
    Sat- scavenge night/leftovers

    I am also new (besides my snarky jimmies comment :) ) I am pretty terrible at thinking a head more than a few days when it comes to cooking dinner. I tend to hit a grocery store three times a week. I am hopefully going to use this as motivation to plan a week in advance. I figure I need to learn with me and my wife’s first little one on its way in Feb and often having to work late….so..here it goes:

    Sun(well already did it but): Almond encrusted Porkchops, with smashed potatoes and peas
    Mon: Chicken with fried noodles oyster/ bean sauce(experimental restaurant recipe replication.
    Tues: Rehearsal, prenatal Yoga, csa pickup – Something fast with our newly acquired veggies. Most likely pasta stir fry
    Wed: Pan fried steak with assorted fresh veggies
    Thur: Shrimp Tacos night with fresh guacamole
    Fri: Anniversary weekend up to NH with BBQ on the road
    Sat: Anniversary weekend up to NH play it by ear

    This is our last week before vacation – hooray!

    Monday: BLT’s and corn on the cob
    Tuesday: cheese tortellini with vodka sauce & shrimp
    Wednesday: ice cream festival at our church!
    Thursday: Taco night
    Friday: Pizza night + eating anything left in the fridge before we leave for vacation! :-)
