I went to one of the coolest things you can go to in the WORLD last night. I know I’m prone to hyperbole, but this time I’m telling it like it is. This is a once in a lifetime (or hopefully, if your lucky, once a year!) experience – the Jaffrey Fireworks!
If you can ever work it to get to Jaffrey, New Hampshire the third Saturday of August, you should. Atlas Fireworks, a world-class, big player in the fireworks world, is based in Jaffrey and every summer they put on a show with their latest and greatest. No words or pictures can even come close to describing one of their shows. It’s simply unreal.
Starting Wednesday, it’s back to real life. Wow, I can’t believe vacation is almost over. What a month! Gotta keep the menu items simple this week, ease back into things.

I made Julia Child’s Boeuf Bourginion this weekend (I am SURE I am spelling that wrong!) and it was…I just can’t tell you how amazing. And the movie is pretty great too! Meanwhile, on to this week:

Tuesday: Caesar Salad with Poached Eggs on top
Wednesday: Spaghetti with Fresh Tomatoes, Bacon, Cream and Worcesteshire Sauce (new recipe!)
Thursday: Thai Beef with Chilies and Basil over Coconut Rice

I’ve started putting the dinner plans on our joint calendar (Google Calendar) so that my husband, who gets off work earlier than I do, knows what to do to help me get dinner prepped. It’s working well so far!
Monday- Pasta and Chicken w/ Tomato Basil Cream sauce (from Tasty Kitchen)
Tuesday- Baked (ground) Turkey Chimichangas
Wednesday- BBQ Chicken, Baked or Mashed Potatoes, Corn Pudding Casserole
Thursday- Our anniversary: out for dinner and a concert
Friday- Out to Dinner with Colleagues
Saturday- Pizza

Haven’t posted my menu’s for a few weeks: summertime:) But still here and actually just got back from Cannon Beach, Oregon and an amazing lil’ cooking experience at a place called EVOO (Extra Virgin Olive Oil). All you foodies would love this lil’ gem. (www.evoo.biz)
It would be a fabulous getaway weekend for 2 or make it a family vacation.

Hi Jane,
I just wanted to let you know that I made your recipe for Rosemary Chicken with Artichokes & White Beans
tonight and it was awesome! I tend to play around with recipes and tweek them a bit to our taste so, I used fresh rosemary instead of dried and added about 1/4 cup red wine to the sauce. I served it with whole wheat couscous, a ceasar salad and vegetable medley.

whenever my little one wakes me up at night with cries of “mama, sleep with me”, and i can’t get back to sleep after he does, i find myself here, at 1:58 am, posting our meals:
sunday: thai food take-out after climbing mt antero
monday: whole wheat pinto bean burritos with green bell pepper and mango peach salsa, (nachos for our gluten free little one) blue chips, and steamed broccoli
tuesday: farmers market corn on the cob and yukon gold potatoes stuffed with vegetarian chili
wednesday: gluten free veggie pizza, backyard garden salad
thursday:buffalo tacos, black beans, fresh fruit
friday: lasagne with brown rice lasagne noodles and goat cheese, backyard garden salad, garlc bread
saturday: family movie outing to city… eat out, qdoba???
