Big Sur is nothing if not breathtaking.
For those of you wondering how or, more importantly, WHY I am posting a menu from our campsite at Big Sur…I am not. I put my menu together before we left this weekend. Nate and I visited Big Sur and the surrounding area a few years ago, so I had a picture to share. Now that the mystery is solved, menu time!
MONDAY:
- Happy Labor Day! (driving home from the big camping trip)
TUESDAY:
- Paninis
WEDNESDAY:
- Margherita pizza (using none other than the new pizza stone! I am definitely going to put the cheese on after the pizza has been in the oven for a bit)
THURSDAY:
- Beef stroganoff
FRIDAY:
- Leftovers
SATURDAY:
- Eat out
SUNDAY:
- Pot roast (I’m feeling like some comfort food, hopefully it won’t be hot this day!)
- Potatoes, veggie, rolls

W – baked tilapia, italian roasted veggies, & fresh bread or dinner rolls
H – leftovers
F – crispy chicken salad with honey mustard dressing

Tuesday: Mandarin Chicken and veggie stir fry
Wednesday: Macaroni and Cheese and Apples
Thursday: Chicken Tikka Masala, Rice and Peas
Friday: Chicken Enchiladas and Corn
Saturday: Chicken Noodle Soup
Sunday: Breakfast for Dinner
Mon – Was salsa chicken, now big brother has a fever…time to replan with no trip to the grocery store
Tues – Hiyashi Chuka(cold ramen with veggies…tastes better than it sounds)
Wed – Pasta
Thu – Japanese Curry Rice
Fri – Curry udon

W – Chicken enchiladas
R – Chicken caesar salad

W – balsamic rosemary chicken w/ caprese salad
Th – Chicken a l’orange w/ cole slaw (Ten Dollar Dinners recipe)
F – frozen pizza and fruit for kids (date night)
S – spaghetti, salad
S – whatever is at the market!
What a breath taking view! Hope you had a fun trip! We had a nice relaxing weekend at home with a friend visiting. Sometimes it’s nice to just hang out.
Also – your tortilla soup recipe was a hit. Thanks! I hope you don’t mind if I repost it on my blog (with credit & my own picture).
Monday – Ate out a bit lunch at Flying Star Cafe with friend before taking her to airport. We split the special (mixed greens, pears, raspberries, goat cheese dipped in cracked pepper with pomegranate dressing) and an ABC patty melt – avocado, bacon, and cheese burger on toasted rye bread. Then we split a strawberry blonde cupcake. YUM!
Tuesday – Curried Sweet Potato Soup, Roasted Garlic bread
Wednesday – BLTs since we’re still getting tomatoes and grapes
Thursday – not sure. I am hosting recipe club, so whatever I end up making for that. Our theme is “food network stars”
Friday – Pizza ? either bbq chicken pizza or margherita.

You’re camping in Big Sur right now? Jane, that makes me want to cry. *sigh* I guess you can have fun without me…

Jane you amaze me. Your camping menu sounds so fancy compared to my typical camping menu which consists of hot dogs or burgers or chili. What is your Beef stroganoff recipe you use? I’m looking for a good one. Here is my menu:
Sun-stuffed green peppers & salad
Mon-honey mustard + olive oil marinaded chicken with green beans & brown rice
Tue-roasted red pepper pasta
Wed-leftovers
Thur-mexican skillet bean & rice
Fri-leftovers
Sat-BBQ at a friends (pray for good weather)

Friday – Date night! Hubby takes me out where they clean up after me and I don’t get my napkins from a dispenser!

Monday- Fliet and lobster with rice and grilled corn
Tuesday- Chicken Tortilla Soup ( the recipie on this site) Soo good! Added a can of crushed tomatos and rice and thought it really completed it!
Wednesday- I have class at night, so left overs.
Thursday – Grilled chicken breast and a big green salad!
Fri & Sat – Eat out
Sunday – i’m sure we will BBQ again
Hi Jane! New reader here. I really like planning a weeks-worth of menus but often have trouble getting past a couple meals out. I went looking for a blog just like yours in order to get inspired and keep on track. So, thanks! I’ll try to check in regularily. Here’s what I planned for this week:
Monday–Kielbasa, pierogies, green beans
Tuesday–Chicken fajitas
Wednesday–Chicken soup with rice (from freezer), salad, turkey sandwiches
Thursday–Pepper beef (again, frozen leftovers!), rice, veggie or salad
Friday–potluck at school (Bringing broccoli slaw)
Saturday–Having a soup night for friends at home. I already made the soup: Summer Harvest Minestrone.
Sunday–not planned yet. Maybe out?
mon/tues-pork chops, salad,brown rice,summer squash.
wed/thur-carne asada marinated with lime,cumin and chili powder……then you slow cook it in oregano and dark beer(taste like real mexican food),beans and rice,salad
fri-sat- pot-roast,red potatoes and salad
(I cook a big meal so we can have leftovers)
