Week 141 Menu

Yeah, yeah. This week’s picture isn’t of food. But you can’t tell me you’re not eating up those perfectly adorable pigtails.

- Some kind of vegetable-based soup, creamy and warm

WEDNESDAY:
- Baked loaded potatoes
- Salad

THURSDAY:
- Leftovers

FRIDAY:
- Homemade pizza

SATURDAY:
- Eat out

SUNDAY:
- Pork chops…and this time I’m going to NOT massacre them like last time, so disappointing when you screw up!
- Veggie
- Brown and/or wild rice

    M – Chicken salad croissant sandwiches & garden salad

    T – Black bean soup with brown rice

    W – lasagne(I’m going to experiment with making ricotta…wish me luck!)

    Th – Chili

    F – Baked potatoes with broccoli or chili

    Weekend – TV Conference weekend…so finger foods, snacks, and 7 layer dip( a new family tradition). My husband gets off easy.

    Oh and there is an awesome recipe for spinach yogurt soup on allrecipes. If you want an idea for a veggie soup. We are big fans. Maybe I should do that instead of salad with the sandwiches tomorrow.

  2. Did you have the risotto last week? I hope you liked it! I have a friend coming in town this week, I’ve planned for a few meals but we love to cook together so I’ve left a couple days open for us to figure something fun out together and see what she’s in the mood fo.

    Sunday – Apple Cider Roasted Acorn Squash and this Salad

    Monday – Homemade Minestrone and buttery dinner rolls

    Tuesday – leftovers

    Wednesday – Vietnamese Spring Rolls from Steamy Kitchen’s Cookbook and Coconut Mango Sticky Rice

    Thursday – ??

    Friday – ??

    Saturday – hopefully going out!

    Monday: Butternut squash risotto- sounded good when mentioned last week so we’re having it tomorrow!
    Tuesday: Stuffed shells, salad
    Wednesday: Sausage and pepper calzones
    Thursday: Angel chicken with pasta and some veg
    Friday:Chicken corn chowder, salad and fresh bread
    Saturday: Chili, cornbread

    Tues–Chicken Tikka Masala (pre-made), brown rice, veg
    Weds–Black Bean and chicken Chilaquiles, tomato salad
    Thurs–spaghetti and meatballs, salad
    Fri–out (kids–pizza)
    Sat–Italian meatloaf, roasted potatoes, green beans

    Sun = cod with fennel and potatoes and mini chocolate cakes
    Mon = roast beef with roasted potatoes and shallots plus salad with beets
    Tues = chicken fajitas
    Wed = burgers w/mushrooms, onions and cheese
    Thur = green beans and port, chinese style
    Fri = sausage, lentil and spinach stew
    Sat = ????

    Leftovers eaten for lunch plus pasta salad with lots of veggies. Our goal is to use our CSA veggies up.

    I am getting good ideas from these menus, so thank you – in a bit of a rut! The Butternut Squash soup recipe looks delicious … already printed that one.

    Our plans this week:
    Monday: Thai style ribs (a new recipe from my Slow Cooker cookbook, will share if good!), basmati rice & broccoli
    Tuesday: Tomato or Chicken Soup & grilled cheeses
    Wednesday: Onion crusted chicken breasts (yes the French’s can recipe!), cauliflower with cheese
    Thursday: steak on the grill, roasted acorn squash with brown sugar (yum)
    Friday: to friends’ for pizza
    Saturday / Sunday: at some point, either a pork roast or meat loaf, and mashed potatoes!

    Let’s be realistic. I have 4 kids that are young, I work full time, and the only way I stay sane, we stay fed, and keep on a budget is a menu. But everything has to be done in under an hour, or be able to throw in the crockpot.
    M- spaghetti
    T- Bean Burritos
    W- Potato Soup and Rhodes Rolls (heaven sent gift these are)
    Th- Chicken Enchiladas (I cook my chicken all at once and then seperate it out into freezer bags so I can have it ready to use._
    F- Sloppy Joes (in the crockpot)
    S- Sandwiches and baked chips
    Su- Pancakes and Buttermilk Syrup
