LOVE this recipe… was introduced to it by an ex-boyfriend’s mother. Ha. The only good thing that came out of that relationship . I have found that if I take the bottom of my spatula or a fork and squish them down flat right when they come out of the oven, that it helps to disperse the carmely goodness, and gives the cookie a really awesome looking marbled appearance where the lighter top cracks and the gooey darker inside shines through. Thanks for sharing this recipe though! I was super excited to find it again!

Before I put these in the oven I dip the top of the cookie in heath toffee bits. They are soooo good!

they seriously for REAL taste like cookies. when I had them the first time, LOVED them…and when I asked mindy for the recipe, I couldn’t believe it when she told me how they are made. I would definitely give them a try!

I have searched for a rolo cookie recipe since my daughter brought them home from school! I am wondering, though, if these particular ones are like COOKIES or cupcakes with a Caramel middle??

Haha, ok thats too funny. I was just about to make these and forgot how much oil I put in so I decided to google it and of course this recipe comes up. The very recipe I gave Mindy at Karissa’s shower. Good to know I found the exact one I was looking for . THANKS!
