so, the Krusteaz mix (which is the one I prefer for this recipe) is one that you just add water to. I HAVE done it with bisquick, which I think usually asks for eggs and/or oil (I can’t really remember)…but yeah, if you do the krusteaz, it makes sense to this recipe and turns out great. good question!

Now the pancake mix you use, is it a just add water mix or do you add pumpkin in lieu of eggs and oil.

I’m definitely a make-from-scratch pancake girl, but all my from scratch pumpkin pancakes were terrible…this recipe worked like a charm!

I will definitely have to give these a try! Last time I attempted pumpkin pancakes they ended up in the trash (I just couldn’t get it right, and not only was the texture and taste off, but I burned them to top it off). I think I will also try Steve’s suggestion above to add baking powder and vanilla. Here’s hoping I’ll get it right this time!

great question…I always forget to say how much the recipes serve!

I think about 15 3-4 inch pancakes…not sure EXACTLY…but I know we each had 2-3 pancakes, there are 4 of us, and we had about 4 extra!

Glad you liked them. When Ferneyn made these I told her I didn’t want any because all the pumpkin pancakes I had before were slimy. When the kids gobbled them up I had one and was converted! Happy Halloween!
