great question…I always forget to say how much the recipes serve!

I think about 15 3-4 inch pancakes…not sure EXACTLY…but I know we each had 2-3 pancakes, there are 4 of us, and we had about 4 extra!

Glad you liked them. When Ferneyn made these I told her I didn’t want any because all the pumpkin pancakes I had before were slimy. When the kids gobbled them up I had one and was converted! Happy Halloween!

I also really like this recipe. However, when using Krusteaz pancake mix, which I agree is the best, add a about 1 tsp. of baking powder and 1 tsp. of vanilla. This will make whatever pancake variation you choose from this basic recipe a pancakes fluffier, and really bring out the flavors of the spices! Also, you can substitute sweet potatoes for the pumpkin to make sweet potato pancakes, which are also awesome!

These look perfectly pumpkiny. I’ve tried making these before with kinda iffy results – will try this recipe for sure!
