Yes, there are several duplicates from last week. I actually never did my grocery shopping last week. CRAZY. This week is going to be different. {Hopefully}

I really, really need to go grocery shopping, but I don’t know when I’m going to have the time this week because I have a lot going on – moreso than normal because I’m trying to do stuff in advance since we’re going out of town for 8 days this month. Here’s what I’ve got up my sleeve and all stuff I don’t have to shop for if I don’t have time.

-Coconut Shrimp with Pineapple and Jasmine Rice
-Meatloaf, Orange Glazed Sweet Potatoes, and Buttery Dinner Rolls

I’ve been really enjoying cooking this last month that I’ve been planning ahead. Thanks for the inspiration, Jane! I’ve also got in some “bonus” cooking projects–such as muffins and chili to freeze for later–like when we have a houseful of relatives and several gatherings to host over Thanksgiving. Here’s this week:
Sunday: Baked spaghetti, green salad
Monday: “Ants in a Tree” (from Hungry Monkey by Matthew Amster-Burton–I highly suggest it for anyone who has children and likes to cook!) garlicky broccoli
Tuesday: (Costco) pot roast, roasted potatoes, veggie
Wednesday: (Costco) salmon, grilled eggplant parmesan
Thursday: leftovers OR bbq pork, potstickers from freezer
Friday: Chicken fajitas, cilantro cole salw
Saturday: Not sure yet.
Oh, and I tried the pumpkin pancake reipe and it was a hit! I used a mix of Krusteaz Wheat & Honey pancake mix and Bisquik light. The fam loved them!

I’d love to share my weekly menu in advance, but we don’t quite do it that way. I menu plan for the month (November = 30 days, subtract two days for Thanksgiving & leftovers = 28 meals, subtract 4 for pizza night [weekly] = 26 dinners, less another 4 for dinner out, leftover night, etc. = 22 dinners planned out). So, each day we look at the monthly menu and decide what we want for dinner that night and scratch it off the list.

Jane – we shop for staples 1x a month. As I menu plan, I put together our shopping list, though light on the fruits and veggies which we shop for 2-3x’s a month. We buy our meat in bulk from Costco and always buy more than we need, so there is always a freezer full of various goodies (for those times when we don’t feel like what’s on the menu). I post our menu on our kitchen cabinet doors (we used blackboard paint on the panel insets). We do some food canning and will start doing more because we can save even more money if we can our own chicken (rather than buying cans at Costco). We can ground beef for days we forget to defrost something, so we can throw together a quick meal.

Tuesday – garlic shrimp & pasta
Wednesday – tacos
Thursday – sausage & tortellini primavera
Friday – leftovers or out to eat
Sa – steak, mashed, and green beans
Su – Stuffed peppers

Wednesday: GNO for me but homemade stovetop mac n cheese and leftover soup for my husband and kids, salad
Thursday: Pescado con coco w/ yuca
Friday: Turkey Osso Buco and mashed potatoes, salad
Saturday: date night (hopefully) so probably pizza for the kids
Sunday: Pork tenderloin with roasted apples and onions
Penne with tomatoes and mozzarella will be a sub. in case I don’t feel like making one of the other dishes.
