Boring menu post this week. No picture. No cute stories. Just a bunch of sick people in the Maynard house. But that’s not going to stop me from getting a menu up on Sunday! Here goes…and here’s hoping we’re all pictures of health by Christmas Eve.
MONDAY:
- Annual chili party at a friend’s home…if we’re not sick, that is! If we’re sick, I think I’ll just make chili anyways!
TUESDAY:
- Bistro chicken (I ended up not making it yet, but love it and can’t wait to have it this week! chicken breasts browned in a skillet, remove & cook 1/2 c chopped onions 5 min, add 1 14oz can diced tomatoes, italian seasoning, 1 can of Campbell’s french onion soup, cook that together to reduce liquid 5 min, pour sauce over chicken in a casserole dish, add swiss cheese on top & bake for 20 min! I love this recipe – thanks to Jen Schulte! I like to serve with garlic mashed potatoes)
WEDNESDAY:
- Leftovers, hopefully
THURSDAY:
- Chinese Take-out (a Maynard Christmas Eve tradition)
FRIDAY:
- Swedish meatballs
SATURDAY:
- Leftovers (hopefully)
SUNDAY:
- Green Noodles (didn’t make this last week, either. basically I went to the grocery store with a very incomplete grocery list…I hope to plan better this week!)

T-Bistro Chicken (I LOVE it–thanks much!)
W-left overs
Th-Layered Mexican dip (old Violette family tradition) OR Chinese (being considered as a new tradition. Kids are lobbying for their pick.)and French Cream Pies (a piece is left for Santa)
F-HAM(my favorite), potatoes, spinach salad, cranberry salad, maybe cranberry slush (again, thank you!), dessert??
S-left overs!!
Well, this week I tried to keep is simple (even more simple than usual)… We are snowed in with over 2 feet of snow in the DC area, so basically we’re using what we’ve got in the house for now.
Sunday- Chili Mac
Monday- Spaghetti Pie (fortunately I bought ingreds last week and didn’t use them)
Tuesday- Chicken Fingers, Mashed Potatoes, Brussels Sprouts
Wednesday- Take Out
Thursday- Out for dinner for my b-day, which happens to fall on Christmas
Friday- Ham, Potatoes Au Gratin, Green Bean Casserole
Saturday- Meatball Subs (big family get-together)
Sunday- who knows! we gotta survive the holiday first!
-Soft Tacos with Shredded Tex-Mex Crock-Pot Chicken
-Broccoli Cheese Soup (didn’t make it last week)
-Leftovers
And then we’ll be at my mom’s. The only think I know from that is our Christmas menu (and that’s because I’m making it!)
-Bacon Wrapped Herb Pork Tenderloin, Rosemary Roasted Potatoes, Balsamic Glazed Asparagus, Rustic Bread, and Flat Cranberry Apple Pie and/or Clementine Spice Cake

Friday: Grilled Steaks, other side dishes I’ll plan later

Sunday: It’s mom’s week to cook sunday dinner.
We’re headed home for the holidays so I have no idea what we’re going to eat most nights.

T – my sister’s b-day. i’m making homemade fettucini with alfredo sauce, grilled chicken, a salad and artichoke dip with chips. mom’s making brownies and peanut butter ice cream for dessert.

T – Christmas Eve. mother-in-law’s fondue tradition
F – Christmas – no clue
S – dinner at an aunt’s house. probably take out

Has anyone tried the bistro chicken with another cheese like mozzarella or cheddar? I bought everything to make the bistro chicken dish and then came back and realized I didn’t know to buy swiss cheese? Well, I’m going to try it anyway and see how it turns out.
I’m sure it will still be great – I would go with mozzarella since it melts better than cheddar!

Hope you guys are feeling better. We just got our Christmas tree today since the kids had a nasty stomach bug and we kept waiting to get the tree together as a family. Thankfully, my husband finally decided to bring home a little tree just so we would have something.

On the Bistro Chicken question, I have used shredded cheddar before and my husband actually prefers it … I usually throw on whatever cheese I have, and it works!
