I started a 10-week photography gig this past week for a big food company. Fun, huh? Yesterday while I was shooting one of the recipes, Cate was putting together a lovely dish of her own. She was telling me that she had just started a new job where she needs to cook and take pictures. Oh, and since we are both earning more money, we can now sit in the front of the airplane. It was so sweet…and funny. Here is her creation, Townhouse Crackers with red grapes, poultry seasoning and black pepper.

Now that I’ve made my new years resolution public, I have to stick with it! Nearly all of my recipes this week are meatless, or use leftover meat from another meal. So far so good! Eating out is going to be interesting. Nate picked up some burritos for lunch yesterday and we split one veggie and one carnitas between us. That’s already 50% less meat then we normally we would have eaten at the same lunch. I’m feeling good about it. Slow and steady.

I love Cate’s creation…. I also think it is so funny that she knows it costs more to sit in the front of the airplane… I am traveling this week and have the special chance to be in business class – oh how will I ever go back to the back of the plane. I just try not to think about it!

Still no crockpot, so I had to do more last-minute tweaking to my weekly plan. I am looking for one of those crockpots that you can take out the insert and also use it on the stovetop for browning. I hoped to pick up one locally this weekend but couldn’t find one. I guess I’ll have to order one.

1 turkey breast (thawed)
15 oz can whole cranberry sauce
1 envelope dry onion soup mix
1/2 cup OJ
1/2 tsp salt
1/4 tsp pepper
Place turkey in crockpot. Combine reminaing ingredients; pour over turkey. cover and cook on low 6-8 hrs.

@Kiasa – I have a hard time following a Mon-Fri menu because I have a hubby that works military shift work, I homeschool, and I’m a full-time college student as well. I have found that when I plan a weeks worth of meals but don’t assign a day to them, I have freedom to choose what works best for that day, but I have everything on hand to make any of those meals. I usually plan a few fresh-produce based meals, a few meals that can be pulled out of the freezer or pantry, and one that is a good meal for having company. I keep a list on the fridge of the meals we have on hand and cross them off when we have them. I hope you find something that works for you and your family!
