What a cute snack!
I work in the floral industry and well, I don’t need to tell you that this week will be helter skelter for me. So…this is my menu.
Tonight: breakfast for supper:toasted english muffins, bacon, scr. eggs.
Monday & Tuesday night: spaghetti with garlic bread and creamed spinach (I make the sauce once, reheat it the second night and I make a HUGE casserole dish of creamed spinach and it will last me almost all week.)
Wednesday night: Fish sticks, macaroni & cheese, cr. spinach
Thursday night: pork chops, rice side, cr. spinach
Friday night: Gravied hamburgers over rice, cr. spinach
Saturday night: to be determined-all depends on deliveries.
Wish me luck this week!

I avoided the grocery store this weekend because I knew it would be packed, so I can’t really say what my menu is until I check out the produce.
I know I do want to make some sort of shrimp pasta dish, with a Parmesan sauce, but like way lighter than alfredo. I haven’t quite figured that out.
I still haven’t made the Chicken Basil Stir Fry that’s been on my menu for 2 weeks. If red bell peppers are on sale again, then see if I can manage to make it this week.

Dear everyone that lives outside of Utah –
Take a moment to appreciate the fact that I am sure somewhere in your town you have a restaurant with good fish. Unfortunately, I get both sushi and seared tuna cravings on a regular basis and cannot fulfill these cravings without leaving Logan. There is simply not a good piece of fish in this town – believe me I have tried everywhere…

This is not helpful to me as a mom. I need recipes! So sure I can post I’m having chicken one night , but how about posting some easy, quick recipes for 5 nites a week. just to say your making enchiladas doesn’t help us moms…how about the ingredient list for shopping and how to make it!!

Comment by Tiffany D. — February 8, 2010 @ 1:34 pm
hi brooke!
when I have a recipe for something, I always link to it in my menu. the leek and potato soup recipe is new to me, so once I try it and know it’s good a good one, then I’ll put it on the site. as for the enchiladas – oftentimes I will do the creamy enchiladas recipe that is on my site http://thisweekfordinner.com/2007/01/31/creamy-chicken-enchiladas/ but this week I’m just going to roll up some flour tortillas with some cheese and top it with canned enchilada sauce…so there really isn’t a recipe for that.
anyway, the whole idea behind the site is to get ideas…I started it to simply get my friends to tell me what they were cooking each week so I wouldn’t have to think up a menu each and every week. the crux of the site is seeking inspiration from other people – getting ideas for meals to cook that REAL people are actually cooking. I love it – it’s been unbelievably helpful for me. I love browsing all of the menus every week for ideas, whether or not specific recipes are shared.
if you ever DO want a recipe for something that I post or another commenter posts, just a post a comment asking for it. I always make sure to follow up and get an answer for you!
there are many paid weekly meal planning websites where they will have a link to a recipe for every menu item and generate shopping lists for you. I think those sites are great and can be very helpful. I may in fact set up a database to generate shopping lists at some point in time, but for now I feel like my website serves a little bit of a different purpose.
I do have many recipes posted on my site http://thisweekfordinner.com/recipes/ feel free to peruse! most of the recipes on my site are simple and approachable as I’m a busy mom, too, and need them to be that way!
hope that helps!

Last week was the first time I committed to a menu and stuck to it. I have an extremely picky 10 year old who for years has given me grief any time it’s not something he likes. He asked for a copy of the menu last week and it was as if he could prepare mentally even on days he knew we were having something he didn’t like. Dinner was a pleasure all week. Amazing!

I’m compiling a personal/family cookbook using Living Cookbook software. To enter recipes already in digital, it has a capture feature. You copy the recipe into that screen, then highlight name, ingredients, proceedure, etc. There are numerous features that I really like.
