This is my life for the next week.

Which is why my menu is pretty much absent of any real cooking. We move on Saturday (staying in the same town, for the curious minds out there). I have a LOT of packing to get done before then…plus our regular day-to-day life to attend to. But it will be FUN FUN FUN! (How’s that for a positive affirmation?)

Tuesday: Crock-pot Minestrone, fresh bread and cheese (leftovers for lunch during the week). Cook enough pasta for pasta salad for lunch
Wednesday: Leftovers magic (pork fried rice)
Thursday: Crock-pot lamb and lentil stew, green salad
Friday: Mom and Dad out, kids and babysitter get ravioli and sauce
Saturday: pizza with toppings and salad (we’re going to experiment with a yeast free crust for Daddy)
Sunday: roast or salmon and large quantities of rice or noodles to use in creative leftovers during the week
Mashed Potatoes and Ham Casserole (parents out to dinner!)

The last time we moved, a neighbor brought us a store-roasted chicken. At first I thought that was an odd house warming, but it fed us for the 1st three days. I highly suggest it….

We just went really cheap and non-perishable when we moved (from NY to NC) – mostly pasta. The best part was when we brought cereal but forgot to pack spoons. I had to “steal” them from a local 7-11.

I don’t understand why people love trader joe’s… it is mostly prepared or frozen… and they are owned by the German version of Walmart. The same people who shun Walmart go crazy over TJ’s.
I just miss Wegmans.

Just wanted to submit after a few weeks of getting some great ideas.
It is refreshing to get out of a rut- and encouraging to see some of the amazing things other families are making. And I can give a sigh of relief that I make some alternative meals for my kid when I know it won’t be received. I really appreciate this blog- and just wanted to say THANKS for reminding me to plan ahead and improvise when necessary!

TUESDAY-[LOST NIGHT]
Chicken Teriyaki with Stir Fry Veggies
I simply stir fry boneless-skinless chicken breast or thighs in ghee, then add a big package of frozen stirfry veggies, after the veggies are done I then add a bottle of Organic Teriyaki Sauce and simmer to let flavors blend.
WEDNESDAY-[CHRUCH NIGHT]
One Pan Pasta Dish
* Brown one pound of lean ground beef, with one small chopped onion and 2 cloves of garlic in a large dutch oven (drain excess fat)
* Add one 24-ounce can crush tomatoes
* Fill tomato can up with water and put in with meat and tomatoes
* Fill tomato can up with uncooked tiny (whole-wheat) shells pasta or elbow macaroni and put in with the meat, tomatoes and water
* Now stir in 1 teaspoon each of dried oregano, sweet basil, garlic powder, onion powder, and fine sea salt
* Bring to a boil, lower to a low-medium, cover and let simmer until liquid has been absorbed and pasta is tender.
* Top with Parmeasn Cheese.

I’m baking my husbands birthday cake. During lent we are giving up pre-made food like eating out, ordering out, or just warming up- so I won’t be buying a bday cake. I’m dreading making it. SO much that I’m actually going to buy a pillsbury chocolate cake box- any suggestions!?
cake mixes are EASY and yummy! and I’m sure you could find some great homemade cake recipes on some good food blogs out there…pioneer woman, smitten kitchen and bakerella all come to mind off the top of my head. don’t be scared – if you go with a mix, you’ll be happy – they’re tasty and SO easy!
