I can’t find my camera cord…so no picture today. Bummer. I even have some great shots of my messy, tiny kitchen and itsy-bitsy oven so you could all feel bad for me. It’s a happy day, though…my cookie sheets just barely fit in the oven. Yippee!
We have had such an amazing show of support from friends this past week – not living near any family, we really needed it. If you were one of the people who fed us, packed and/or moved our stuff, or took care of our daughters…THANK YOU from the bottom of our hearts!

Chicken Weds: yellow curry chicken w/ coconut rice (yellow curry sauce from Trader Joes, lite coconut milk for coconut rice from TJs) plus naan from TJs
Pasta Thursday: stir fry w/ rice & veggies
Fish on Fridays: Costco salmon fillets – either just baked w/ olive oil & lemon or bourbon/maple syrup recipe from LA Times. Serve w/ sweet potatoes sprinkled w/ Old Bay Seasoning and baked in oven.

Wow–#11 That’s a first for me, I think. Congrats on the new place, Jane. How about Pot Roast for this weekend? Kind of celebratory but still easy to throw in the oven. Congratulations on your successful move! Wish we could have watched the kids, taken you out to dinner and filled the freezer with goodies to make life easier. Moving is so hard! I think roasts are really something nice for a Sunday dinner, and are quite easy as well. A large enough piece of meat can also leave you with some great leftovers for the week then. Pop some potatoes and carrots, or chopped winter veggies in there with some olive oil and herbs and get them nice and toasty, it’s really a one pan meal. Good luck to you! I’m glad it sounds like you have a good support system, it helps tremendously.

Saturday: Fiery Fish Tacos w/ crunchy corn salsa ( from allrecipes.com) & leftover posole. You should try this the salsa it worth it. For the fish I did not use the cayenne pepper sub 1tsp chili powder. reduced salt to 3/4tsp and pepper to 1/4 tsp. very happy w/results.
