This has been a bad winter for clementines/cuties/mandarins (whatever you want to call ‘em!) for the Maynard family. Bag after bag have been dry and yucky. Until now. We are on bag #2 this week and they are so juicy and sweet. And I’m so happy! It’s the little things, right?

No more excuses…our apartment is almost totally in order and it’s time to start cooking again. I sure hope I can get back in the groove!

I don’t know what every meal will be but what I do know is that we are trying this new recipe we saw on the today show! Looks very good… and is very easy! I will let you know if turns out as good as it looks.

well now i can’t remember where i got the recipe for the black bean and spinach enchiladas, but here is the recipe:
Black Bean and Spinach Enchiladas
10 to 12 small flour or corn tortillas
10 oz package chopped spinach, thawed (I do this in the microwave)
15 oz can black beans, drained and rinsed
14.5 oz can diced tomatoes with green chiles and spices, drained
¾ cup scallions, chopped
19 oz can green chile enchilada sauce
8 oz sour cream
3 cups shredded Pepper Jack cheese
Garlic powder and onion powder
Salt and pepper
1. Preheat the oven to 400 degrees and get out a 9×13 inch Pyrex baking dish.
2. In a colander, squeeze out as much water from the spinach as you can by pressing the spinach with the back of a spoon. Place the spinach in a large bowl. Add the rinsed beans, drained tomatoes, most of the scallions, and dash of garlic powder, onion powder, salt and pepper to taste. Set aside.
3. Mix together the sour cream and green chile enchilada sauce. Spread about 1/3 of the sauce mixture into the 9×13 inch dish.
4. On a plate, place a tortilla and top with some of the spinach mixture and a small amount of pepper jack cheese. Roll into cigar shape and place into the baking dish seam side down. Repeat until the dish is full.
5. Spread the rest of the sauce on top of the enchiladas and top with the remaining cheese and scallions. Bake for about 30 minutes or until hot and bubbly. Wait a few minutes and serve.

I finished Bittman’s Food Matters that I won here (thanks again) and I’m all for trying to eat less meat. Last week, I tried almond milk for my cereal/oatmeal and didn’t even miss regular milk. I want to find a good vegetable broth (or else try to make my own I guess) because I make a lot of soups to take to work for lunch. I tried a Trader Joe’s one and did not like it. Here is my mostly meatless menu:
Sun: Garden Veggie Enchiladas (from epicurious.com)
Mon: leftover enchiladas
Tues: Baked Potatoes w/ broccoli, cheese, bacon
Wed: portobello, broccoli and red-pepper melts (from Everyday Food)
Thurs: Pasta w/ tomato sauce from freezer, salad
Fri: ?

Jessica, you should definetly try making your own veg. stock. I make mine w/ all the ends of carrots, onions & celery that I cut off when making other recipes. It makes me feels so frugal. So basicaly everytime I cut up a vegetable , I save the end ( that I was going to thow away anyway) by putting it in a container in the freezer. When im ready to make stock i put all the frozen veg. in my biggest pot. Fill it w/ water ( the stock reduces as it cooks) 1Tbs italian seasoning 1Tbs salt . I also throw in a few small cloves of garlic ( you know the very tiny ones that can be such a pain to use). Bring pot 2 a boil then turn down 2 a simmer. Simmer for 1 hour. Then strain, I line my culindar w/ a very thin kitchen towel( use something that you won’t mind being stained). Discard the very mushy veg. Now you can put your homeade veg. stock in containers and freeze or refrigerate ( but only if your going to use in the next couple days).

One solid month of planning and printing out the menu for the kids to see and we have basically had “whine-free” dinners for a month. WOW I can’t believe this is all it took.

Monday: Holden’s 4th Birthday – his choice: macaroni & cheese and cake! (I’ll work some protein in there somehow)

Haddock Chowder Recipe
This recipe makes a thin chowder. Maine chowder is traditionally thin, as the potatoes break down the chowder thickens a bit but it is not the same as what one would think of as a typical “New England” chowder.
Ingredients:
approx. 1 tablespoon olive oil and butter
1 1/2 lbs haddock, cubed (about 3 good sized fillets)
1 large or 2 small onions, chopped
5 or 6 white potatoes, peeled and cut into 1″ cubes (approximate)
8 cups water
1 can evaporated milk
approx. 1 cup half and half or whole milk
salt and pepper to taste
Saute onion in olive oil over med. heat until soft. Add potatoes, haddock and water, bring to a boil and reduce heat to simmer. Add salt and pepper to taste. Simmer until potatoes are cooked through (until the edges are rounded). Take off heat and add canned milk and half+half. Stir and let sit for about 5-10 min. Enjoy!
My mom sometimes sautes the haddock in a separate pan then adds it to the soup pot. She says it adds flavor to the fish. You can use any kind of seafood in addition to or in place of the haddock (corn is good too).
