		<description>I DID have a menu this week, although it kind evolved over the last few days. I thought I&#039;d post it, even thought it&#039;s sooo late, so I can keep my &quot;good record&quot; on doing so: 
Sunday--leftovers
Monday--Subway sandwiches (T-ball starting!)
Tuesday--Chicken burgers
Wednesday--Vegetable and shrimp curry with brown rice
Thursday--Spaghetti and meatballs, green beans
Friday--Pesto Tortellini Soup (can&#039;t wait to try the one Jane posted in January)
Saturday--Cranberry Brisket, Roasted potatoes, broccoli, pudding--someone else posted a link to this earlier and I thought I&#039;d like to try it.

		<description>Haddock Chowder Recipe
This recipe makes a thin chowder. Maine chowder is traditionally thin, as the potatoes break down the chowder thickens a bit but it is not the same as what one would think of as a typical &quot;New England&quot; chowder.

Ingredients:
approx. 1 tablespoon olive oil and butter
1 1/2 lbs haddock, cubed (about 3 good sized fillets)
1 large or 2 small onions, chopped
5 or 6 white potatoes, peeled and cut into 1&quot; cubes (approximate)
8 cups water
1 can evaporated milk
approx. 1 cup half and half or whole milk 
salt and pepper to taste

Saute onion in olive oil over med. heat until soft. Add potatoes, haddock and water, bring to a boil and reduce heat to simmer. Add salt and pepper to taste. Simmer until potatoes are cooked through (until the edges are rounded). Take off heat and add canned milk and half+half. Stir and let sit for about 5-10 min. Enjoy! 

My mom sometimes sautes the haddock in a separate pan then adds it to the soup pot. She says it adds flavor to the fish. You can use any kind of seafood in addition to or in place of the haddock (corn is good too).</description>

I had a lot of leftovers last week (yes!) so some of those meals carried over to this week.  Made planning a little easier.</description>
