Pasta with Peas & Ricotta…and a Giveaway!

The first recipe I made from my new cookbook was a success! The whole family loved this pasta with peas and ricotta last night. Looks yummy, doesn’t it? It was fast and only used one pan, which makes the recipe even better in my book!

Pasta with Peas & Ricotta
From Everyday Food: Fresh Flavor Fast
- Coarse salt & freshly ground pepper
- 12 oz gemelli or short pasta shapes (I had farfalle (bowties), so that’s what I used)
- 12 oz sugar snap peas
- 1 package (10 oz) frozen peas
- I cut up about 8 asparagus spears into short pieces, and cut the quantity of peas in half…it would be good either way
- 2 tablespoons butter cut into pieces (I did 3 TBSP, because if 2 is good, 3 is better, right?)
- 1 tablespoon coarsely chopped fresh tarragon, plus sprigs for garnish (I forgot to pick up tarragon, so I did some basil and parsley which was tasty!)
- 1 cup ricotta cheese

Bring a pot of water to a boil; add a generous amount of salt. Cook pasta until al dente according to package instructions, adding snap peas 3 minutes before the end and frozen peas in the last minute of cooking. Reserve 1/2 – 1 cup pasta water; drain pasta and vegetables, and return them to the pot.

Toss pasta and vegetables with butter, tarragon, and ricotta, adding enough reserved pasta water to create a thin sauce that coats pasta. Season with salt & pepper.

    I LOVE so many of the Everyday Food recipes, and all my magazines are filled with dog-eared recipes I go back to time and again, but this Tortilla and Black Bean Pie is one that is a favorite. It’s one of the only ways I can get my husband to go meatless, and he didn’t even notice its lack of meat- it’s that hearty. The recipe says to trim tortillas to fit a springform pan, but I never bother with that extra step; just squeeze them in, or set the pie layers in a round casserole dish, even if it doesn’t fill it completely. Enjoy!

    When I was little my favorite food to make was lasagna. Now my favorite “easy but yummy dish” is

    creamy chicken enchiladas

    I cook up about 1 lb. of chicken and add a can of cream of chicken soup, 1/2 a can of milk, 4 ounces of cream cheese, and a small can of diced green chili. For additional seasoning I toss in a little black pepper, paprika, and some delicious mild chili pepper that I bought off someone from New Mexico who was selling it (and fresh fire roasted chili) on the side of the road. Put the filling in the tortilla of choice, sprinkle a bit of cheese on it, roll them up. Reserve some filling to go on top of all the enchiladas and sprinkle with additional cheese.
