This past week was GREAT. I can’t tell you how nice it was to have a decent menu plan again and actually follow it (with tweaks here and there, of course). I cooked real meals. I had the ingredients in the fridge. It was so nice.

Nate went to Costco yesterday. I like it when he goes without me because he buys splurge items like pre-cut mango, which I always feel a little guilty spending extra money on. Seriously, not having to slice mango but still getting to eat it is the BEST.
MONDAY:
- Asian Spinach Salad (I’m going to try leaving the chicken out, maybe add a few veggies to the mix…although it is really good WITH the chicken, just trying to figure out more veggie-based dishes)
TUESDAY:
- Fajitas (leftover ingredients from last week)
WEDNESDAY:
- Butter Chicken & Basmati Rice (still looking for a good recipe for Butter Chicken…any tips?)
- Naan bread
- Some sort of veggie
THURSDAY:
- Leftovers

- Frittata (I’m going to do a veggie frittata, but use the linked recipe as a base)

No real plan yet, though I’ve had risotto on the mind lately. Tonight thinking about some Asian-inspired braised chicken thighs with coconut rice. Tomorrow will be some Meatless Monday inspiration, Thursday is always date night with the Mr. and Friday’s are always homemade pizza night. Will gifure out the rest as the week goes on.

I have a great recipe from Phyllis Carey (“the casual gourmet”) whose cooking classes I’ve taken. I have her book “Fast and Fabulous Chicken Breasts” and she has a really good butter chicken recipe. She serves it w/ sauteed spinach w/ garlic & mustard seeds over basmati rice.
2 Tbsp veg oil
1 cup chopped onion
2 Tbsp minced fresh ginger
1 jalepeno chili, seeded & chopped
2 tsp garam masala (I can find it at Jimbos and our larger grocery stores)
1 6 oz can of tomato paste
1 1/2 cups chicken broth
1/2 cup heavy whipping cream
4 boneless skinless chicken breast halves
salt & pepper (to taste)
1/4 cup unsalted butter (divided use)
4 lime or lemon wedges
Heat oil in 3 qt saucepan over medium heat. Add onion, ginger & chili and toss until tender & browned (about 4 min). Stir in the garam masala and then transfer to a blender (I just use one of the mini cuisinarts – easier to clean). Add the tomato paste and chicken broth & blend until smooth.. Return to saucepan and add the cream. Bring to simmer and cook until sauce reduces to about 2 1/2 cups (about 5 minutes). Set aside (sauce can be made ahead which I do).
Trim/pound chicken breasts to even 1/2 inch thicknes. Season w/ salt & pepper to taste.
Heat 1 Tbsp of butter in skillet over med high heat. Brown chicken on both sides (about 2 minutes). Pour in reserved sauce and simmer, uncovered, 5 to 7 minutes until chicken is cooked through.
Remove chicken to serving plates (over rice). Swirl remaining butter into sauce. Spoon sauce over chicken and serve w/ lime or lemon wedges.
I like to do the shopping too, otherwise my hubs tends to splurge on things:)

It’s been a long time since I’ve posted. It’s good to be back and enjoying looking at everyone’s menus! Here’s ours for the week (though it doesn’t offer up many ideas since we have dinner plans away from home quite a lot this week):

I’ve never heard of butter chicken, it sounds yummy! Also, I just did a frittata and based it off this http://allrecipes.com/recipe/potato-and-vegetable-frittata/detail.aspx. I just used veggies I had around, some leftover broccoli, some frozen grated zucchini, and I chopped and boiled a potato. I also added parmesan into the egg mix and spices (basil, oregano, thyme, tarragon). And left out the tomato. It was really good. This week:

T: Beef pot roast with herb roasted potatoes and carrots
W: Leftovers OR Escarole and white bean soup, French bread, green garden salad

This week, I am trying to use up a lot of stuff in the freezer and pantry because, next weekend, we are going to try the once-a-month cooking thing, so I want to make sure we have room.

-Tamale casserole (1 lb grnd beef, 1 can Ro-Tel, corn, topped with cornbread batter – bake according to cornbread instructions)
-Turkey dinner (there was a turkey in the freezer)
-Pizza
-Shrimp stir-fry

-Tuna noodle casserole
I have a meal plan for this week, but don’t have it in front of me, I’ll try to post it later. BUT I wanted to mention that there is a veggie frittata recipe in Food Matters that I’m going to try this week!
