Pistachios are officially on my list of ‘beautiful foods I love looking at when I cook’ (I’m an artist, I can’t help but be a little obsessed with what food looks like). Blueberries still take the top spot, but pistachios aren’t far behind. Yesterday when I was cracking a bunch for a recipe, it was the first time I really looked at them. Of course there’s that vibrant green color I’ve always liked, but what I hadn’t really noticed before was the contrasting purple in the skins. I love it.

On to the menu. I have a couple duplicates from last week. We were able to draw out our ham leftovers longer than I anticipated (I even froze lentil soup AND ham in the end!).

Tues: Crockpot day, I’ll be checking out a slowcooker blog to decide what to make. I also have a roast to toss in as a back up plan.
Wed: Hamburger or Beef Stroganoff with steamed broccoli
Thurs: Taco night
Fri: Leftovers, or homemade pizza night (if there’s no leftovers left after eating them for lunch).
Sat: Eating out with friends
Sun: Roasted whole chicken, undecided on the side dishes.
To get more fruit in our diet I’ve been slicing fruit, usually apples or pears and putting it out as a side dish with dinner.

I’m not a fan of nuts, but pistachios are somehow okay with my mouth. Pine nuts and pistachios are the only nuts I’ll consume. Haha. I haven’t started planning a menu weekly, I really should though. Everyone says it will make life easier.
