I can’t believe it’s already time for a menu…I looked at the date yesterday and could not believe how far into the year we are. Time, slow down just a bit, won’t you? I just know those little hands holding that glass of juice won’t be little for long enough.

- Stir Fry (it’s been a while since we’ve had this) with rice and some appropriate side dish like dumplings or something

- Bertucci’s Tortellini (I’m leaving out the sausage this time around…I just really feel like a yummy pasta with a creamy tomato sauce…mmmm….it’s all about the sauce this week)

Saturday: Something low maintenance and easy. We’ll be going back and forth between the houses.

I haven’t got much figured out for this week in regards to food/menus… but we’re definitely having the following (and I cannot wait to make them!)
Chicken Caesar Pitas! and then Frittata! Mixing in sausages (not the breakfast links, but real ground up sausage), peppers, onions & potatoes with the eggs. Sprinkle a little cheese over top. Just like Gramps used to make for Sunday brunch.
Mon: Meatloaf, mashed taters, green beans (there’s always one dish that we never end up making so it gets kicked to the next week!)
Tue: Chicken salad with parsley biscuits
Wed: Steak, oven roasted potatoes, salad
Thr: Pork, asparagus/broccoli, rice a roni
Fri: Kebobs? Taco Salad?
Sat: Some kind of casserole
