Before we get to today’s menu, I need to clear something up. Yesterday my friend Nikki used my lemon bar recipe. She told me the bars came out great, but that she used butter instead of margarine. “Butter instead of margarine?” I asked. ”Yeah, your recipe calls for margarine.” “No it doesn’t. I use butter. I’ve never even purchased margarine. I would never put margarine in a recipe,” I replied in complete confidence that Nikki was nuts. “No, Jane, your recipe says margarine.” I whipped out my iPhone as fast as my little fingers could whip and sure enough…my recipe said margarine. Oh, the horror I felt upon this discovery! (It may sound like I’m exaggerating, but I’m not. Just ask Nikki.)

So, let me clarify: the lemon bars use BUTTER. Never margarine. If you made the recipe and used margarine and wondered why the bars weren’t as good as I claimed they were, now you know. The primary reason I think they are SO DELICIOUS is because the crust is a beautiful variation of shortbread. And the reason shortbread is SO DELICIOUS is because it’s basically a giant stick of butter with a little flour and sugar thrown in. This was purely a case of cut-and-paste gone wrong. I had created the recipe from a few different recipes I’d tried over the years. Obviously I read right over this very important word. Ack!
Now that we’ve got that all cleared up, how about a menu? My rant is over and I feel better already. (I hope my margarine-loving readers don’t take any offense to this post…although I do still think you should switch to butter
)

Margarine?? The HORROR!!
Here’s my menu for the week:
We are going to have a fun and interesting week this week! I am super excited to try out another recipe from my favorite Mother’s Day gift, The Pioneer Woman Cooks. My hubby and our oldest are going on a Daddy/son bonding trip this weekend so the other two clones and I are going to have a little fun, dinner-time included. Clay (age 6) chose our dinners for Friday and Saturday evenings.
Friday–Grilled Cheese and noodle soup (which in clone-speak means Ramen noodles)
Saturday–Fish sticks and mac & cheese (yes, it’s from a box!)
Sunday–Chicken with Parmesan noodles
Monday–Pioneer Woman’s Chicken Fried Steak
Tuesday–Breakfast
Wednesday–RALEY, MY FIRST BABY, TURNS 10!!!!! He wants to go to Posado’s (Mexican food).
Thursday–Weeknight Lasagna (I will more than likely blog this!)
Glad I hadn’t made these for my hubby yet, although I think I would have subbed butter anyway. I went right to my recipe document for this and made the change tout suite! He loves the lemon bars at Books-A-Million and this recipe sounds like its clone. Thanks for the clarification!
So glad you don’t use margarine! Hate the stuff! I don’t use a lot of butter (stick to olive oil) since I don’t bake much. But the other night I was making garlic bread and made garlic butter for it. I HAD to lick a little of it off my finger and called out to my boyfriend in the living room, “Butter seriously tastes SO good!”
We are going out of town for a century bike ride this weekend (Friday-Monday) so I am trying to plan a menu this week that will leave us with nothing perishable in the fridge:
Sunday: Shrimp and veggie stir fry with brown rice
Monday: Whole roasted chicken with green beans and potatoes
Tuesday: Turkey meat loaf with rice a roni and green beans
Wednesday: Chicken tacos with refried black beans
Thursday: Sandwiches with whatever is left in the fridge – fend for yourself
Friday – Marinated Shrimp, fruit
Saturday – Spaghetti, green beans, homemade crescent rolls
Sunday – Chicken and Stuffing, corn, fruit
Monday – Son’s 4th bday: he wants McDonald’s
Tuesday – Cheddar Sausages, potato spinach casserole, fruit
Wednesday – Tuna, calico beans, fruit
Thursday – Sloppy Jo, broccoli w/ cheese, fruit
With my husband’s and my new summer job it is not unusual for us to be getting home at 10 or 11 oclock, so menu planning is going to change a little for me this summer. I just buy ingredients for a handful of meals and then that night’s meal just depends on what time we get home/ if I am still in the mood to cook something/ if cereal or frozen chimichangas (lame, I know) is just going to have to do. Once I use up all the ingredients, I go shopping again. These are the meals I have stuff for and will make sometime in the next week.

Oh and we are moving in 6 weeks to Lousiana, so I don’t get to buy anything that won’t be gone by then (yeah that means no sugar or flour, bulk buying, etc)- our summer meal planning is going to be interesting…
I just realized I never posted my menu for the week !
I have to admit that I’ve never used margarine and for recipes that call for it I always replace it with butter !!
Saturday – Prime Rib with mushroom sauce/Fries/Green Salad
Sunday – Shrimp in wine sauce served over linguine
Monday- Sea Bass with String Beans
Tuesday – Tuna Sandwiches/Soup/Salad
Wednesday- Curry Chicken/Rice
Thursday- Skirt Steak/Semoule with fresh peas
Friday- home made pizzas
I’m back after a few weeks of some ca-razy work scheduling. No day off in 3 weeks-I’m beat, but, hey! At least I have a job.:)
Tonight-A breakfast scramble with thawed hash browns, cheddar cheese, and eggs, and ham.
Monday-Rise and shine quiche-same ingredients as the scramble, just made differently.
Tuesday-Chicken over pasta and a veggie
Wednesday-Barbecued chicken, rice side, sesame snow peas
Thursday-Pork chops, paprika potatoes and beans
Friday-Steak, roasted potatoes, green beans
Saturday-Steak, roasted potatoes, green beans
Sun- snacks from shopping trip: Sam’s and Whole Foods
Mon- Pasta w/homemade sauce (from the freezer) and a variety of Whole Foods Chicken Sausage
Tues- Burgers or American Chop Suey (not really sure, something with ground beef)
Wed- Meatball Subs
Thurs- Chicken Fajitas and Refried Beans
Fri- Fend For Yourself
Sat- TBD, probably some sort of homemade soup
Fri: Pita Sandwiches + Parmesan Baked Potato Halves + Watermelon
Sat: Hamburgers + Oven Fries + Corn-on-Cob + Watermelon
Sun: Asian Chicken Cabbage Salad + Watermelon
Mon: Choo’s Marinaded Chicken + Brown Rice + Fruit or Veggie
Tues: Fresh Tomato & Basil Pasta + Fruit or Veggie
Wed: Sandwiches and/or Clear-out-fridge-Meal (….To-Go)
Then we’re going out of town for a couple weeks. Ahhh…taking a break from menu planning.

Sunday: dinner at a party! Yay!
Monday: Meatless Monday has been moved to Tuesday as the pork needs to be used. Overcooked pork given to be by mom, salvaged by some sort of sauce. Tacos perhaps?
Meatless Monday-Tuesday: Almond flour gnocchi with quick tomato sauce.
Wednesday: Burgers in lettuce wraps (or rolls if I feel inspired to bake) with chickpea/peanut flour fries.
Thursday: Parenting Class night – make a protein shake and call it dinner.
Friday: Egg foo young
Saturday: Mama needs a night out…

Butter for sure! Love buttering my saltine crackers and eating with the chowder and chili mac dishes.
Funny, you used the word clarification when talking about butter. “Clarified butter”, get it? You probably did that on purpose and I just “got it.”

T-Foil dinners, saw it in a previous post and it sounds good, ground meat, onions, potatoes, carrots, sweet potatoes, mushroom soup. Add a green salad or green veg.

YAY for BUTTER! my 2 yr old loves butter so much i have 2 keep it off the table and out of reach , beacause she will eat it all by itself.

Tuesday: teryaki & pineapple garden burger served w/ a salad
Wednesday: Bean & chz burritos w/basic mexican rice (Pdub).
Thursday: Garden salad & bread.
Friday: Fish tacos .
Saturday: Toasted pesto veg sand.
Sunday: Nachos.
We only use butter, so even if you told me to use margarine I would of used butter anyways:)

Most of my week’s cooking is going to be focused on prepping meals and snacks for next week, when Peter and Gabe (husband and son) will be alone for a full week during Peter’s last week of law school classes. Time to freeze a bunch of lasagna for them!
My last semester of school (yay!) began this week, and it kind of snuck up on me. So this week is lame:

T – denver/western omelets w/ hashbrowns
W – leftovers or mac and cheese for hubby, freezer meal at work for me (since I don’t have time to come home before class)
