Lots o’ Grains Salad

For my party last week, I made this concoction, which I’ve decided to name the “Lots o’ Grains Salad.”

It’s a rice-like dish that you can serve hot or less hot, i.e. mine sat out for a little while before the party started and still tasted great. It’s super easy and I thought a nice compliment to a summery meal, and a great side dish for the pork tenderloin (recipe tomorrow).

Lots o’ Grains Salad
From Jane Maynard, This Week for Dinner

Ingredients:

  • Harvest Grains Blend from Trader Joe’s (if you don’t have a TJ’s, here are the grains so you can replicate: Israeli Style Couscous, Orzo, Baby Garbanzo Beans and Red Quinoa)
  • Brown Rice Medley from Trader Joe’s (if you don’t have TJ’s, here are the grains: Long Grain Brown Rice, Black Barley, Daikon Radish Seeds)
  • Olive Oil
  • 2 shallots, diced
  • Chopped parsley, to taste
  • Fresh grated parmesan cheese to taste (prob. ~ 1/2 C)

Directions:
Cook all grains according to package directions. While grains are cooking, sauté shallots in oil over medium heat until soft and translucent (use a large 12-inch skillet with higher sides or a large saucepan). Add cooked grains to shallots, then stir in the parsley and parmesan cheese. Remove from heat and serve!

    Oh thank you for this easy peasy recipe! I keep looking for more creative ways to include more grain in our diets, and this will help. I just tried Quinoa last week for the first time and thought it was great – I’m glad to have one more way to use it!

    Those little daikon radish seeds in the brown rice medley are my favorite! I use that mix in soups and salads. I can’t wait to try this, although I’ll have to wait until after “The Move”!

    We love that rice medley. I didn’t have such great luck with the other grain mix–do they all get done at the same time for you? We had some really undercooked parts (I can’t remember which ones). Maybe I just need to cook it longer.

    I had a few pieces here and there that seemed a little crunchy…maybe the baby garbanzo beans? not sure…I think next time I’ll try cooking 5 or 10 more minutes, but overall it came out pretty well for me.

    I do LOVE the rice medley a LOT…it’s definitely my fave of the two.

    Any idea what the proportions of grains are in the TJ’s Harvest Grains mix? I’m great with the idea of buying the items separately, but I’m not so sure how much of each to mix up.

  9. that is an interesting question….

    for the harvest grains blend – I think the israeli couscous and orzo are higher in proportion to the other two grains. maybe twice as much of the couscous and orzo than the other two grains….

    this is vague. I know. I’m not home right now to look at the bag, but when I get back next week I’ll check it out! :)

  10. I know this is an old post, but I just found this. Anyway, I’m wondering if you cooked the entire bags. Also, did you mix them together in the pot or use 2 separate ones?

      hi collette! yes, I used the entire bags of those particular varieties I mentioned, but I did cook them separately. you could adjust the amount according to your needs.
