I have 12 roma tomatoes. What should I do with them? I’m thinking some caprese salad. Maybe a Tuscan bread salad? Or maybe something you suggest…hint, hint.

Last week was the very busy last week of school, among other things. I only made one thing on my menu plan, mostly because we never made it to the grocery store! What in the world did we eat? I know we ate out twice, but what happened the rest of those days? It’s a mystery! This will actually be the subject of a reader-requested post coming up this week…so save any comments on this subject until then!

Hi Jane! I have had several weeks like that lately when the menu didn’t really happen. I have also wondered what do others do in that situation, so it will be good to read your post, and hopefully some comments, on the topic.
I don’t eat a lot of fresh tomatoes myself–it’s a texture thing. But I do cook with them and serve them to my family. Here is a good casserole that uses summer vegetables (zucchini or yellow squash) that i think is great:

I’m allergic to tomatoes-but I make tomato based dishes for my hubby quite a bit. I would say, make a pasta salad, hull out and drain the tomatoes upside down on a paper towel, then stuff the tomatoes with the pasta salad.
Fresh tomatoes on a pizza are always yummy! I also like to roast them with olive oil, salt, and pepper.
Sunday: Lamb Chops with Pistachio Tapenade (from Smitten Kitchen); this one is too intriguing to pass up!
Monday: Chicken Pasta Salad (make ahead)
Tuesday: Shaved Asparagus Pizza (from Smitten Kitchen)
Wednesday: Drip Beef in the Crock Pot (Pioneer Woman)
Thursday: Stuffed Peppers from the freezer stash (This Week for Dinner)
Friday/Saturday: Grandma and Uncle Mikey are here this weekend!! Out? Whip up something fabulous with Mike? Hard to say!
So I saw a recipe from Giada on the The Food Network Years ago. It was really yummy. She cut up fresh tomatoes, added them to olive oil and garlic and let it simmer in a pan until the tomatoes got very soft. Boil some pasta noodles. When the noodles are ready, add them to the sauce pan and mix with the sauce. Add fresh mozzarella and chopped basil. The fresh flavors are really simple and delicious. It’s so easy. The cheese melts when the sauce and noodles are mixed all together.

With Roma tomatoes I love to make Caprese sandwiches, Greek salads, pasta with pesto/tomatoes/cubed mozzarella, and I love this Pasta with Tomatoes, Chicken, & Feta. I’ll be making it soon, since it’s such a great summer dish.
The kids and I are gone Monday thru Wednesday this week so our menu is kind of scattered. We’ll be visiting my dad and stepmom so I’m not sure what we’ll be eating, although I know we’ll have bbq for sure one night.
Friday – Eat out
Saturday – daughter’s bday party: sandwiches, pasta salad, chips, fruit
Sunday – Ham and Veggie Primavera
Monday (for hubby) – homemade mac n cheese from freezer
Tuesday (for hubby) – fajitas
Wednesday (for hubby) – homemade chicken nuggets
Thursday – tuna and tortellini
Monday- Sesame and spinach salad (mix up 1 tea each honey and soy, 1 tb each lemon juice and sesame oil, salt and pepper. toss with spinach, red bell pepper, red onion and cucumber.) and grilled chicken.
Tuesday- Mac and Cheese, tuna and peas (something i grew up eating and just love. No one else seems to though!)
Wednesday- Baked Sweet Potato, left over grilled chicken
Thursday- Leftovers
Friday- Family is coming into town so we will eat out.
I’d vote for the Tuscan Bread Salad… but sadly I would be the only one at my house eating it- but a sauce for pasta would be gobbled up by everyone!
Sunday: Spaghetti, salad, garlic bread
Monday: Salmon with Bourbon BBQ glaze, Beer bread, Spinach Salad,watermelon
Tuesday: Beef Pho with CSA green onions, Cilantro and Mint from my herb pots (if I get radishes this week, I may make a side with that?)
Wednesday: Hubby cooks. Omelets with CSA eggs, spinach and green onions, berries and toast
Thursday: Hubby cooks. Bacon Cheeseburgers, sweet potato fries and green beans (or radishes cooked with butter in foil on the grill)
Friday: My birthday dinner out at Benihanas
Saturday: TBD: Dinner at my parents with my aunt and uncle? Hotdish? grilled chicken?
i think you should juggle them.

The caprese salad is sounding really good to me. I can’t wait for our tomatoes to hurry up and get ripe!

Oven-dried tomatoes – fantastic when made with romas. Slice in half lenght-wise, brush with olive oil, sprinkle with garlic powder, salt, sugar, oregano and anything else that sounds good. Bake at 200F or on low depending on your oven, for at least 2 hours and up to overnight.
These are fantastic on a sandwich with grilled portabello and a creamy sauce.

I love oven roasted romas. They are less seedy and less delicate than most tomatoes. Oven roasting is like cheat sun dried tomatoes. They are easy and great. You can store then in a bit of evoo in the frige for quite a while. Considering how much they cost, they are a very decadent treat. Romas are also great for cevice, and the weather has been great for cevice lately!

My favorite way to eat romas is sliced really thin on homemade pizza with lots and lots of basil! Our tomatoes are slowly growing and I can’t wait to eat some fresh ones soon!

i love using roma tomatoes and plum tomatoes to make bruschetta. (i use a mix of chopped tomatoes, fresh basil cut into ribbons, minced garlic and feta cheese; place on toasted pieces of french bread that are lightly brushed with olive oil and sprinkled with salt, drizzle with elmusified balsamic vinegar and extra virgin olive oil, salt and pepper)
