Happy Father’s Day! Nate requested Indian food, so I’m making Murgh Makhani (Butter Chicken) today. I can’t wait to eat it myself! We’re having a combined Father’s Day-Birthday celebration for Nate today, and he’s requested Strawberry Shortcake for his birthday cake. I’ve never made traditional strawberry shortcake before, so if anyone has a good recipe for the biscuits, please share!

The girls and I are driving to Utah on Tuesday, where I will be speaking at the Evo Conference (The Evolution of Women in Social Media). I’m SO excited and will definitely be reporting on the trip. This means I don’t have a menu this week, so I am relying on YOU to share and inspire one another!
MONDAY:
- Whatever I can throw together while frantically finishing up last minute trip preparations. I think I’ll be stealing one of your ideas from Friday’s post!
TUESDAY:
- Driving to Utah in a Lincoln MKT (provided by Ford for our trip)…honestly, I can’t wait to drive bajillions of miles in that car!

- Opening Keynote and Dinner at Evo

- Dinner at the Waldorf Astoria Park City
SATURDAY:
- Closing Party at Evo with Families!

- Getting together with friends…probably potluck of some sort!

We are heading to Utah as well. I am bringing the whole family for vacation, but I’ll be up at Evo. Can’t wait to see you!
Our car looks pretty similar to that one, but it is a Subaru Tribeca (love it) and of course not brand new. We have had it 2 years this fall and it was 2 years old when we bought it, so it’s not up to date with all the cool gadgets.
I really wish it had iphone/ipod docking in it like so many of the newer cars had. But it’s been a great bigger car for our family without being HUGE. And the third and second rows fold completely flat. Last time we went to Utah we drove home with tons of boxes from Ikea (new desk and bookcase) in the car, with the kids, and our luggage and it amazingly all fit!

Hi Jane. The recipe from Maria looked good! I have been teaching shortcakes to kids all week. They have been so impressed with themselves. I do tell them to get their dough together in the bowl, turn it out onto the bench, press it to the desired thickness, and cut it. By not rolling or kneading, you’ll avoid overworking it. You should have butter lumps. Also, I give them a good 15 minutes in the freezer before I put them in the oven. When you brush the top with egg wash, be careful not to let it drip down the sides much. Otherwise they won’t rise up as well.
Okay, her’s my favorite ratio…
A little more rich than a scone
2.5 C AP flour
3 T sugar
1 T baking powder
.25 t salt
1 stick COLD cubed butter (do this first and chill)
1 egg whisked with
.5 C + 2 T half and half, or whole milk, (also chilled)
The egg and added sugar take these from scone to cake. Lemon zest is still a welcome addition, especially with a little basin in the strawberries.
P.S. I’m making strawberry pie today.

Menu? What’s that? Oh yeah – the thing I should have made up by now!
We’ve got a niece visiting this week, and we’ve got plans to be out and about a lot this week – after working 3/4 days in early mornings. UGH. I will be toast by the end of each day – given I’ve just recovered from another illness and am needing to baby myself a bit still.
So – we’ll do our best to be intentional, economical, and use up what’s in the stores since we’re pretty much broke as can be!

The best strawberry shortcake biscuits I’ve ever done are Cream Scones with Currants from the Food Network. Just leave out the currants. You can use lemon zest or orange zest or leave out the zest altogether. They make a great substitute for your standard shortcake! Happy Father’s Day!

I have a new baby and am adjusting to getting dinner on the table when the baby is always fussy in the afternoon! I recently came onto the idea of fixing dinner the night before after the baby has gone to bed, so I’m hoping to get back to menu-planning and cooking more. I love your site for ideas and motivation!

I haven’t had a chance to get my meal plan for the week done. Stirfry tonight … but Jane I have a recipe for a different twist on strawberry shortcake.
In my strawberries I mix some sugar and a touch of lemon juice to taste and mash it up.
Then I take sliced pound cake butter both sides and grill it (either on panini grill or skillet)
For the whipped cream sometimes I add a touch of maple extract instead of vanilla.
Assemble and indulge!
