The light is always just right.
And drinking fountains abound.
Too bad we still have to eat and I still have to plan a menu every week!
Actually, this week is kind of nice…no traveling of any kind. A little break before more travel madness ensues next week! Sorry for the multiple carry-overs from last week’s menu…things were bananas.

Friday: Veggie Pasta (roast all leftover veggies, toss with tomato sauce and throw over whole wheat pasta)

Eric bought tortillas at Costco while I was out of town and they are taking over the fridge! Either soft tacos or quesadillas.

It’s a pretty lame menu this week. We’re out of town most of the week. I’ll be doing my stock-up-cooking-extravaganza this week, but not much on the what’s-for-dinner-tonight-cooking front this week.

Wed: husband’s birthday so who knows

Fri: some kind of summer salad
Sat: BBQ chicken wraps
Oh and plenty of fresh corn on the cob from a local farm…several times a week.

Okay – so I’m a little behind – it’s been a crazy busy week, and well – I’m tired! (That comes after having spent the past year pretty seriously ill – it’s appalling how long it really takes to get over it all!)
Monday – Spaghetti and if I get the strawberry syrup done, and the beans canned, then I might also make garlic breadsticks… just depends on the whole energy level thing…
Tuesday – Tacos (yes, the boys chose!)
Wednesday – the parents have a dinner meeting, the kids are probably going to DIY (it’s great having teenagers!)
Thursday – Fish on the grill and some pasta side dish
Friday – Teriyaki chicken on the grill (this is an experiment – I’m hoping it turns our fabulous!)
Saturday – Fajitas
Sunday – Pork chops – probably on the grill – just because we can!
I’ll probably make potatoes on the grill about a bazillion times this week because I’m in love with them in a big way… gosh, they’re fabulous!
