This peach jam is taunting me this morning. Begging to be eaten. But I can’t. It’s not ready. Word of advice: when you make jam that needs to sit for 24 hours before eating, make it in the MORNING so that the next morning you can actually eat it…in the MORNING. Mmmmm….doesn’t it look good? It’s got to be ready, right? Walk away, Jane. Just walk away.

Eric just left to go out of town for work for the next couple of days. I always hate cooking when he’s gone it just isn’t as fun without someone to share it with (or rather, someone who actually appreciates). I’m going to take things pretty easy for the next couple days.
Garden Vegetable Omelet for me, muffins or pancakes with fruit and yogurt for the kids.
A big gigantic green salad with grilled chicken, possibly a “Mexican” grilled chicken salad if I remember to buy some tortilla chips which I previously forgot when I bought all the ingredients to make green salsa. DUH.

I’m back after a long hiatus – involved a new computer among other things – glad to be once again inspired by your menus!
Even though the week already started so it’s a little cheating, here goes.
Monday – sushi for the adults, leftover mac & cheese and green beans for kiddos
Tuesday – grilled chicken breasts tossed in buffalo sauce (it’s my ‘light’ way of doing wings), celery, blue cheese
Wednesday – bbq ribs, baked beans, oven fries
Thursday – leftovers or takeout
Friday – Monday – traveling for Labor Day weekend!
Sunday – corn chowder with flatbread rosemary, grape & romano personal pizzas
Monday – mexican salad stack: chips, beans, cheese, lettuce, tomatoes, onions, salsa, sour cream, guac all layered atop
Tuesday – tomato fresh mozz basil marinade with fresh pasta, salad, sour dough artisan bread
Wednesday – baked potato bar, corn on the cob, grilled tofu and onions, quinoa and salad
Thursday – yellow curry over rice with fresh toppings
Friday – vegetable enchiladas, salad, fresh green beans, mexican rice

We are moving this week and plan on packing and moving stuff all week so my menu will have to wait I love all the menus this week though and wanted to say that I do.
So my menu is eat out most of the day and if not we will probably have mac and cheese or ramen or spaghetti or something cold from the store like subs or something. Healthy right? I know!
I will have to try that Adobo chicken, it looks great!
