Just a quick simple post today, a follow-up on a favorite recipe.
I really do love the vegetarian chickpea burger recipe that I shared with you last April. It’s become a staple around here. My only beef (ha ha!) with the recipe is that often when I go to flip the burgers, they fall apart too easily. So, I have to be super careful and gentle…and often still mess them up!
I found the perfect solution! Chickpea Burger Sliders! I mini-me’d the burgers and used mini hamburger buns. They were super duper easy to flip and tasted just as delicious. I had to share that quick tip because I’m downright delighted by the discovery.
I found mini hamburger buns at Trader Joe’s, but given the recent popularity of “sliders,” I’m sure you can find them in other stores as well.
One more thing! I topped these particular burgers with cheddar cheese, sprouts and cucumbers, and a little mayo and mustard. Scrumptious, I say!

Yummm! What a great idea! Being that I cook for one, have you ever tried freezing these?
I haven’t tried freezing them, but I kind of think that would work well! There have been times when I haven’t cooked it all in one night, and I keep the leftover “batter” in the fridge and that works…and I really think freezing would be fine! but that’s just me guessing…
I made these the first time you posted, and they did sort of fall apart, but were delicious. I had lots of extra so I froze them, they were just fine reheated. Mini versions, great idea
These are on my menu for this week! (Although I think I’m going to try a falafel variation and serve them in pitas. We’ll see how it goes.) Thanks so much for sharing this recipe last spring–we probably had them most weeks throughout the summer

These are totally cute!! And I love the color. I have such a hard time finding mini slider buns, but now I’ll have to check out my local Trader Joe’s… good to know! I do like the pita idea too

i’ve used those tiny yummy dinner rolls (like white castle) for sliders too
or mini bagels
