For our “eat out” night last week we went to Tacone, one of our favorite quick spots to eat. They have these amazing homemade potato chips with this crazy good seasoned salt, which is a little bit salty and a little bit sweet and a lot wonderful. I think my new mission might be to figure out that seasoned salt. Let the quest begin!

Okay, here’s my menu. Last week I tried assigning the meals to weekdays but everything got mixed around. What’s worked for me the best in the past is just planning 6 meals and then cooking the more work-intensive ones on days that I have more time (I don’t always know in advance when that will be). I only do 6 because I know we’ll either wind up eating out or having a leftovers day.
1. Black bean pineapple enchiladas with salad
2. Veggie stir-fry and frozen potstickers with brown rice
3. White bean chicken chili (crockpot) with tortilla chips
4. Tuna noodle casserole with roasted brocoli and cauliflower
5. Veggie pizza with salad
6. Roasted veggie tagine with whole wheat cous cous
Great idea! I find that often happens to me – I never know which days will be more hectic and the meals rarely end up on their planned days.
I’m totally with you…I list meals next to days, generally looking at my calendar as I plan…but I definitely move things around frequently! gotta go with the flow
I’m a college student, but I love cooking! Every two weeks or so, I buy ingredients for four labor-intensive meals, and I cook when I can and eat leftovers and frozen meals in between. This is what I’m planning for the next few weeks:
1. Indian summer stew (acorn squash, coconut and lentil stew)
2. Slow cooker pesto lasagna with spinach and mushrooms
3. Onion and cumin quiche
4. Hasselback potatoes with spinach cashew pesto
I’m also having my capstone project group over for dinner on Wednesday, so I’m making pasta carbonara and chocolate sea salt molten cakes!

Saturday- turkey and black bean tacos w/rice and tomato avacado salad

So glad I found this website. Meal planning is something I’ve wanted to do for a long time, but it seemed like such a daunting task. The ideas and suggestions I’ve gotten from everyone here has really made it easier for me. So here’s my first go at a meal plan:

Planning out meals for the week makes grocery shopping so much easier and cost-effective. And I love using Sunday as a day to prep ahead for other days of the week. While my chicken for my tikka masala was marinating yesterday, I made my pizza sauce for Thursday, and put together my raviolo lasagna for tomorrow. Now, all I have to do is pop it in the oven when I get home!

I’ve been reading y’all’s menus for two years now and have only posted mine once or twice… so I suppose I better start earning my keep
Sun: Pot roast w/potatoes, carrots, green beans and lemon cake
Mon: Leftover Ragu Gunk (it’s this creamy pasta casserole my kids call Ragu Gunk b/c I sometimes use Ragu in a jar to make it)
Tues: Vegetable soup w/homemade whole wheat rolls
Wed: Grilled salmon w/brown rice, tomato/corn/avocado relish and veggies
Thurs: Carnitas tacos OR Ravioli Lasagne (feeding two 19-year-old missionaries so need VOLUME here, and something yummy)
Fri: Sandwich bar
Sat: Date night! Little Caesar’s for the kiddos
Monday: pork chops
Tuesday: tomato tortellini soup
Wednesday: night class for Sarah/man meal for Ben
Thursday: leftovers
Friday: some kind of Mexican… maybe tacos?
Saturday: breakfast for dinner

Tuesday: Pork street tacos (crock pot a pork shoulder) with cilantro, sour cream, black bean & corn salad. SNACKS: Graham crackers, yogurt and green apple
Wednesday: Ziti with Ricotta Cheese and Salad; SNACKS: Fruit salad, Cheese & Wheat Thins, Yogurt
Thursday: Chicken Salad Sandwiches
SNACKS: Sliced Apple & Peanut Butter, Yogurt, Jello cup

The winter is always the hardest for me to stick to a menu plan because of our activities! This week is especially crazy!

Tuesday- SNOW DAY! Slow cooker lasagna
Wednesday- The husband is working late so it will probably be leftover lasagna for me and chicken nuggets for the kids!!
Thursday- Pork chops, egg noodles and green beans
Friday- Heading to see the Nets play….my bet is on crappy stadium food!
Saturday- Maybe Leftovers, maybe something exciting if I can get to the supermarket!!

Hi All!
Both when I was first married and when I started menu planning regularly, I took the approach of planning several meals for the week and then deciding the night for each as I went along. I also give this advice to anyone who is having difficulty with getting started or sticking to a menu plan.
Well, last week was a doozy–extra work hours, family wedding, relatives staying over, AND I hosted a large brunch and went out to eat twice over the weekend. Somehow, between the leftovers and my freezer, I have decided that I can get by without a lot of cooking this week. Seems like a good time for that–my kitchen is clean and I sometimes like it that way!
Monday: (Costco) Meatloaf & mashed potatoes, a green veg
Tuesday: (Leftover) Baked french toast, scrambled eggs, sausage, fruit
Wednesday: (Freezer) lasagne, green beans
Thursday: (Leftover) quiche, bacon, croissants, fruit
Friday: Leftovers or take out
Saturday: Out of town
Funny week because I went shopping on Friday instead of Sunday. So here’s my week starting on Friday
Friday: Taco Salad
Saturday: White Fish Special with rice(At-home version of a dish from my favorite Japanese restaurant in Houston: any white fish with brown butter/jalapeno/ginger/garlic sauce. Surprisingly easy and oh-so-tasty!)
Sunday: Tuna Pasta
Monday: Black Bean and Chicken Chilaquiles
Tuesday: Out (I just decided this. I’m pregnant I’m allowed
Wednesday: Lentil soup with Caprese paninis
Thursday: Dijon Pork Chops with mashed potatoes
I’m trying desperately to get back into menu planning because without it, we’ve been living on take-out!
Tuesday- was supposed to be beef fajitas, but had leftover pizza instead! (see what I mean about take-out!)
Wednesday- was going to be porkchops, but as the fajita meat is already marinated… we will have beef fajitas!
Thursday- Roasted chicken and potatoes, green beans
Friday- out for MIL birthday
Saturday- chicken spaghetti made with l.o. chicken from Thurs.

Saturday – Pork tenderloin with honey butter sauce, brussel sprouts, crusty bread with olive oil and herb dipping sauce
This is the first week of school for us, so it’s been hectic and we’ll be eating out a lot more.
Sunday – Went out to a formal dinner
Monday – Chana Masala, Vegetable Somosas
Tuesday – First day of School, out to celebrate
Wednesday – Ritz Chicken, Green Beans and Duchess Potatoes
