I bought English muffins recently and Cate has become obsessed. She would eat a whole package every morning if we let her. Is it the English muffin itself or perhaps the butter and homemade jam filling the nooks and crannies? Can’t say I blame her.

If you are interested in making your own English Muffins, an older version of Laurel’s Kitchen has a great recipe based on plain yogurt. I make it every couple of weeks with 1-to-2 white-to-whole wheat flour; most commercial ww English Muffins are too sweet.

Monday- pulled pork in the slow cooker (hubby’s request for Valentine’s Day) w/oven roasted asparagus

And English Muffins? LOVE LOVE LOVE them. With all 3 of my pregnancies, if I ate an English Muffin with peanut butter on it, I had no morning sickness. The days I didn’t or I tried another topping…you don’t want to know!!
I have been working on my meal planning 2 weeks at a time. We live about 45 minutes from major grocery stores, so planning 2 weeks at a time should make for less frequent trips to the grocery store. We will see how this plan works out. If we can make it work, it should save both time and money. This menu is week 2 of our plan:

I just bought some high fiber Thomas english muffins and the Bitty loves them!
I don’t have this week’s menu, but tonight we grilled surf & turfs(lobster tail, steak and asparagus – two turfs) and it was delish.
Last week, I made the EASIEST cream pasta recipe EVER. Had I known it was this easy to make a creamy pasta, I’d weigh about 100 lbs more (that’s like 2 of me!). Ingredients:
Spaghetti,Heavy Cream, Scallions & white onions, Salt/pepper
Prosciutto. Chop prosciutto, cook, set aside. Cook scallions and onions in a bit of water, salt & pepper til water almost evaporates. Add cream (may add more water if needed). Put on top of pasta and top with prosciutto. So GOOD. I don’t really cook so this was a new discovery for me! I just used all the left over stuff in my fridge! What a happy little discovery.

I have to tell this to someone. I didn’t post a menu this week because we have a ton of leftovers. But my really REALLY picky husband made me cavatelli with alfredo from scratch (none of that jarred stuff), garlic bread with “fancy” pizza dipping sauce, and s’mores fudge (to remind me of summer because I have a bad case of the winter blues). This is the first time he has ever made me a full meal without asking for any help and he loved doing it! He was so proud and now he wants to help me cook dinners. Which means, he’ll actually try the food he makes. So I think that means he wants to help me plan meals too. He asked me for the link to this blog yesterday. So next week, we might have some awesome collaborative meals planned out!
