Our vacation is officially over. And, I must admit, it’s good to be home! We had some really great food this past week, but I am looking forward to eating at home again. Just need to make sure we get to the store first thing tomorrow…our cupboards are bare!
And, sadly, no photo this week. My camera and camera cord are still packed. And I’m just too exhausted to dig them out!

This week’s a pretty simple one for us. My husband’s a tax accountant so he rarely makes it home for dinner this time of year and I’m really just cooking for me and a toddler who usually picks at dinner anyway.

Wed: Pesto pizza topped with broccoli, tomato, and spinach

I recently cleaned out my old magazines and came across two articles on scallop preparation. One was from Fine Cooking which talked about the perfect sear on sea scallops and included 3 sauces. The other was from Everyday Food and it was a recipe for Scallop Po Boys using bay scallops. Both can be accessed on line.

I haven’t posted for a while. We’re trying to figure out our evening schedule with two different baseball practice schedules, work schedules, and Relay For Life meeting schedules. We’re going to make it work this week though.

I’m starting to find that I’m just in repeat mode from prior weeks. Which is easy on one hand, but I’m worried that it will cause us to get too burned out on dinner menus. I’ve got to promise myself that I’m going to take some ideas from these menu and incorporate new items into our dinner menus. Maybe I can try for a twice a month goal for now.

I get in ruts all the time. since I have 4 years’ worth of menus to look back on, sometimes I’ll pop back a few years and look at an old menu – it always makes me laugh because there will be dishes that I totally forgot about that used to be ones I was in a rut with!
one thing I find helpful to do is to write a list of EVERYTHING I can make for dinner – including things as simple as hot dogs to my more elaborate recipes. then I’ll go to that list to get ideas for things I may have forgotten about.
and, of course, stealing ideas from everyone else’s menu is the best!
Found some great new recipes and threw in one or two that the kids (ages 11, 7 & 3) won’t say “EWW!” before even trying a bite! Ugh.
Monday. Chicken & onion kebabs with roasted red potatoes with sea salt
Tuesday. Homemade creamy tomato soup with heart shaped grilled cheese & corn on the cob
Wednesday. Crispy panko crusted cod with lemon dill sauce and rice and salad
