Week 233 Menu

Nate has been buying mangoes at Costco lately and they have been so tasty, we can’t get enough. I just wish it didn’t take five minutes to cut up one mango! But, I must admit, it is worth the effort.

I am absolutely loving reading about all of your pregnancy cravings. I knew we’d get some good comments, it’s cracking me up…and making me feel much better about myself! And I can’t believe how many of us have craved McDonald’s cheeseburgers! What in the world?!

I soooo blew it on last week’s menu. I’m not even entirely sure what we ate. But it would have been yummy if I stuck to it, so I think I need to put a few of those items on for this week. I apologize for the repeats!

MONDAY:
- Tuscan Tomato Soup
- Yummy bread

TUESDAY:
- Creamy Chicken Enchiladas
- Guacamole and chips

WEDNESDAY:
- Leftovers (swim lesson night prevents any real cooking time)

THURSDAY:
- Real live honest-to-goodness hamburgers…Nate’s sick of me feeding him chickpea burgers. Stinker.
- Baked beans, watermelon

FRIDAY:
- Tacos (Jodie had this on her menu last week, we haven’t done a taco night in years…and it sounds really yummy to me right now!)

SATURDAY:
- Eat out

SUNDAY:
- Waffles
- Fresh fruit

    Thursday-Beef Tamales, Crock Pot Black Beans, Green Salad
    Friday-Pizza and Salad

    This week:

    Monday- Whole wheat pasta with tomato cream sauce and italian dressing marinated chix
    Tuesday- Huevos Rancheros
    Wednesday- Marinated Grilled Chix and Pineapple Sandwich with a side of some veggie
    Thursday- Marinated Pork Tenderloin and a veggie

    Fri/Sat/Sun- headed to Maine, probably lots of grilling, pasta salads…perhaps a strawberry pie :)

    I don’t necessarily plan meals for a given day, I just make sure I have enough for the week.

    This week’s meals: Taco Soup, Pancakes, Cheeseburger Pie, Sausage Balls, Savory Chicken Cups, Grilled Cheese, Pork and Mushroom Ragu.

    Thursday – taking son to college orientation away Thursday and Friday

    Sat: Baseball game: hotdogs it is!

    Sunday – Farmer’s Market Summer Pasta, bread and salad, berry cobbler w/fro yo (family over for dinner).
    Monday – Leftover pasta, or make a spaghetti sauce w/ leftover veggies (if we are pasta’d out I could also do a stir-fry w/ leftover veggies).
    Tuesday – Soup and bread
    Weds – Trader Joe’s since husband works late.
    Thurs – “fancy” mac n cheese (packed w/ veggies)
    Friday – Grilled Chicken Caesar Salad
    Sat – Out

    Tues: grilled salmon and potatoes
    Wed: Adobo pork and glazed carrots
    Thurs: broccoli cheese soup
    Fri: sping vegetable pasta
    Sat: chicken fajitas

    Ok Janers, mango cutting lesson #1

    Cut off ends. then, with your paring knife, cut a grid through the meat of the mango, but not through the skin. Then, scoop that goodness out with a SPOON beginning at the edge and working your way in throughout the grid. Lovely bite-size pieces in seconds!

    Now you can eat about 5xs as many mangoes in as many minutes.

      my mind is blown. why have I never thought of this approach before? it’s how we cut avocados, for heaven’s sake. trying this next time!!!!

      I do this too! And when the sides are gone, I’m a usual culprit for attacking the pit with a paring knife…or my teeth! It is somewhat unfortunate that this method makes mangoes disappear so quickly!

      My favorite way to cut an avocado is to cut it in half, use the blade of my knife to remove the pit, and then cut the halves in half. These avocado quarters peel quite nicely if the fruit is ripe…no wasted pieces of mush stuck inside the leathery skin!

    • I don’t get it, but it sounds like the way my mom does it! And my husband taught me how to cut an avocado the same way as Emily. My two favorites – wish I could have them both right now!!

    Sunday: Homemade meatballs and sauce over wheat spaghetti
    Monday: Smoked sausages and veggies on the grill, sweet potatoes
    Tuesday: Leftovers
    Wednesday: Honey Nut Chicken fingers, grilled veggies, Israeli couscous
    Thursday: Leftovers or Chicken and Spinach burritos
    Fri-Sat: Hubby’s out of town…cereal for me!

    Monday: Burgers a la Pizzaiola (Giada)
    Tues: Summer Garden Pasta (Barefoot Contessa)
    Wed: Rigatoni w Rapid Ragu (Mad Hungry)
    Thurs: Bahn Mi Wraps (Aarti Party)
    Friday: out!

    Tuesday – Whatever I decide since I’m on my own
    Wednesday – Tabbouleh, hummus and fresh pitas
    Thursday – zucchini lasagna

    Saturday – who knows!

    • Hi Bonnie! I made this last night for dinner tonight and tasted it. I really enjoyed the taste! We put in a cucumber because we’re swimming in them and used cherry tomatoes instead. I used a recipe from Cook’s Illustrated that you can find here.

    This is what we are having this week. :)

    Sunday- We had smoked sausage, and cabbage. ( we tried a new brand of smoked sausage. It was horrible. The dog go most of it!)

    Monday- BBQ Country style ribs, French Fries, stewed
    apples.

    Tuesday- Grilled pork steaks, butter and herb potatoes, cucumber slices

    Wednesday- Out

    Thusday- Cheese burgers, chips and grapes

    Friday- Not sure… it has to be fast.. and I can’t come up with an idea yet…

I am not one to “plan” menus, as I will just be trying daily to use up as much produce as our garden can provide! (tonight’s meal was a Squash/Roasted Tomato/Garbanzo Medley)

    I too didn’t get to most of my menu last week. I’m blaming the 100 degree heat index in St. Louis. It really zaps you from doing anything.
    Sunday- Fish Tacos
    Monday- Sloppy Joes and Sweet Potato Fries
    Tuesday- Chesse Tortellini with Bolognese Sauce (from a batch in the freezer), Garlic Bread and Salad
    Wednesday- Roaster Herb Chicken (Pioneer Woman) and Marbled Stuffed Potatoes
    Thursday- Grilled Summer Corn and Chipolte Chowdah and Salad
    Friday- Chili Mac (didn’t make this from two weeks ago)
    Saturday- Leftovers or Take Out?
    I really think I need to try the homemade graham crackers from Pennies on a Platter this week too. Smores are sounding yummy.

    Monday – Chili cheese burgers & sauteed zucchini
    Tuesday – Pork chops & leftover sauteed zucchini (we have a LOT of zucchini)
    Wednesday – Deli style roast beef sandwiches & bowtie pasta salad
    Thursday – Homemade Pepperoni pizza & garden salad
    Friday – Out
    Saturday – Grilled sausage on a bun & roasted finger potatoes

    We write our menu on a mini white board that’s stuck to the side of the fridge. This week my daughter says to me “didn’t we have grilled chicken last week?” The summer is like that for us, we take advantage of being able to grill when we can. Plus it’s too hot to cook inside.

    Sat – teriyaki steak, baked potatoes & roasted veggies
    Sun – grilled chicken, baked potatoes & corn on the cob
    Mon – rotisserie chicken, couscous & garden salad
    Tue – Janna’s chicken & rice pilaf
    Wed – out for my company’s summer outing

    This week we’re working on clearing out the freezer. Not exactly sure what we’re going to have – but it’s all going to be freezer meals. I love that there’s a week I really don’t have to plan anything – just open the fridge and pull something out to thaw! It’s a nice break from slaving away in the kitchen when it’s 100+ degrees outside.

  32. On top of starting my second summer class this week, our oven decided to nearly catch fire after one of the heating elements shorted out. So it is totally a sandwiches, soups, and frozen Amy’s enchiladas kind of week in our house until we have more time and decide what we want to do about the oven. Blerg.

    I don’t have a menu, but I will say that I love using frozen mangoes in my smoothies. When I used them fresh I felt like the drink turned out a little pulpy and unappetizing. When they’re frozen they blend up nice and smooth and delicious. This morning it was straw-peach-mango, and I want another one now.

      a girl after my own heart – we have frozen so many mangoes over the last month I’m surprised they fit in the freezer. they are SO good in smoothies!!!!

      strawberry peach mango sounds perfect. and I have frozen strawberries, peaches AND mangoes, so maybe that will be tomorrow’s breakfast. :)

    Those mangoes look so juicy and delicious! A good healthy pregnancy craving. My last pregnancy all I wanted was pineapple and watermelon. I could not get enough of it.
