*THE RECIPES*
::Sloppy Joes:: (Sunday)
I just use the McCormick Sloppy Joe Packet Seasoning and whatever tomato-paste is on sale.
::Slow Cooker Savory Herb Chicken:: (Monday)
2 1/2 – 3 lb. chicken, cut into serving pieces
2 envelopes Lipton Recipe Secrets (soup mix) "Savory Herb with Garlic" flavor
2 Medium red bell peppers, cut into 1-inch cubes
1 cup coarsely chopped onion
1/2 cup dry white wine or water
-Combine all ingredients and cook on high for 4-6 hours, or low for 8-10 hours.
::Amy's Shredded Salsa Chicken:: (Thursday)
I just put 4-5 frozen chicken breasts into the slowcooker,a few shakes of chili powder, pour in a 24oz jar of salsa, and cook on high for 5 hours. Shred with 2 forks and you have amaaazing dinner/leftovers for days (& it freezes well too so you can save some for the weeks ahead if there is any left)!

Wednesday: picking up japenese take out on the way home from the girls dance class (cucumber rolls, salmon and chicken teriyaki, veggie tempura etc.)
Thursday: Homemade chicken noodle soup with warm rolls, chocolate chip cookies
Friday: steak in red wine sauce, roasted mushrooms and mashed potatoes
Saturday: salad, crusty bread, fish…maybe lemon sole, orzo in herb butter

So, here is a list of some of our usuals. Not exactly a meal plan, but it’s something to share!
Pasta (we usually do whole wheat, but not always) with tomato sauce, sometimes with a salad, sometimes with simple garlic bread
Stir-fry – this is a big one for us.
some combo of veggies (often carrots, broccoli, napa/thin leaf cabbage, garlic, green beans, sugar snap or snow peas, etc., and tofu. We love the Soyaki regular or Veri Veri Teriyaki sauces).
burritos, tacos, fajitas. Beans instead of meat (or occasionally we’ll do ground turkey with taco seasoning for tacos depending on who we are cooking for).
Hearty salad bar nights
Indian food
Soups – especially crockpot. Especially bean-filled.

I was wondering…does anyone have a good recommendation for a website/blog for healthy, clean eating? I don’t mean diet recipes…I just mean putting more good things and less processed foods. I’m a full-time working mom so it’s hard to make a healthy meal every day, but if I could prepare a couple meals on the weekend, it would be helpful. Unfortunately, the only meals I know how to prepare are not the healthiest.
