I hope you all had a great Thanksgiving! I cooked literally all day on Thursday, which was lots of fun after months of not cooking at all. We spent the weekend feeling very thankful for all that we have…well, except maybe the disaster that is our girls’ room right now.
I just finished stringing the lights on our Christmas tree and am looking forward to sitting down with a mug of hot chocolate. May this be the first of many more mugs this winter!

We are still working on leftovers today and I’ve made two batches of rolls this weekend…and we might have to make another batch today! This week I’m tackling all of the meals we have stashed in the freezer, so it should be pretty easy, as long as I remember to defrost things in time…

Interesting squash soup recipe – I hadn’t thought about adding leaks. I love the one in the America’s Test Kitchen cookbook… onions, squash, thyme, broth, nutmeg, touch of cream at the end….
I love the leeks in the soup, it’s a great flavor!

Also, I have a question, what exactly is dream dinners? how does it work?
lexa, dream dinners is a place where you go, they have stations set up for different recipes, you put the food together then go home and freeze it. my sister-in-law LOVES dream dinners and does it all the time. I like them, and it’s fun to do, but I’ve only done it twice…and both times because someone gave us a gift card. it’s a fun way to mix up dinner and have stuff on hand!
Trying to use things in the freezer and cupboard this week to save some money.

One of the perks of living in Florida, I guess! They sometimes throw in some non-local, organic produce to fill out the basket….and keep me on my toes!
I’m still getting my CSA bags, too!
although, when it’s the winter months, it’s a LOT of squash, broccoli and navel oranges.
BUT…we’re still getting a bag, and it’s pretty awesome regardless. gotta love living in warmer places!

We did a turkey breast for Thanksgiving, and had very little leftover. We have been finishing up the leftover sides. My favorite is bread stuffing and German stuffing. I hit all the food groups with those!

Tuesday -Roast chicken, sauteed veggies, rice cooked in chicken stock or quinoa

I love that you had turkey dinner on sunday – every year that we eat somewhere else, I always end up cooking our own thanksgiving dinner a few days later, too. I just can’t NOT have leftovers!
Not much cooking for me this week but I’m having a baking marathon on Wed to make mince pies and cookies for my charity quiz night the next day.

For the first time in a long time, I have no idea what we’re going to eat this week. I have enough leftovers to make turkey popovers one night. And a turkey sandwich. We had frozen pizza last night – just so we got a night without turkey leftovers. Maybe pasta one night? Or a caesar salad?

Sorry I missed posting this week. My father passed away on Monday after a short illness. Our meals this week have been provided by friends, neighbors and church family. How wonderful it is to have a support group to help get through these things. Hope to be back next week.

This is starting Saturday (the 3rd) and ending Friday (the 9th). Since I work during the week, going from Sat or Sun to Fri or Sat is easiest for me… I am a music teacher and just had my Christmas Show this past Thursday. Crazy week! Planning meals and shopping once (hopefully) a week is easiest for me.
Saturday the 3rd – Mexican (tacos, I lay everything out on the table and let everyone fend for themselves, I get soft and hard tacos – more choices!).
Sunday the 4th – we are having a friend over and we are taking him out for dinner
Monday the 5th – Baby Back Ribs (in the Pressure Cooker with BBQ sauce, we LOVE the Pressure Cooker), couscous (Far East box – they are awesome!) and a can of veggies
Tuesday the 6th – A roast (I will have to look at prices, I’m saving bones for a Christmas Party – my plan for the party is to have a variety of soups), preferably beef, mashed potatoes and a vegetable (green beans?)
Wednesday – Manischewicz (spelling?) dry soup mix. They are $1 plus some change in the international aisle of our supermarket and all we have to do is follow the easy directions and add water. I’m getting the Minestrone, but we have tried the Lentil Soup – it’s great! One package serves 4 people. They also have split pea, chicken noodle, and I forget what else…
Thursday – I actually have a day off from school so I can cook your beef stew (THANKS!), I might add a few more veggies though – such as peas, corn, green beans, sometimes a can of stewed tomatoes… Gives a little variety to the standard stew…
Friday – we are going to a family party to celebrate birthdays – I will whip up some sort of dessert on Thursday since I have a day off to bring. They are having it catered, so no need to bring a side dish. But this side of the family are dessert-aholics (VERY Italian…LOL). We will have plenty of cookies, cakes, pies, etc… I’ll have to think of something unique that no one else will think of, maybe I’ll get out my bread machine and read the dessert recipes…

yea, so glad you did a plan! I think you’ll find you’ll really like doing it…you don’t ALWAYS end up following the plan, but even then it makes life a lot easier! keep on posting – love to see your menu!
