I am doing so badly on my menu lately. We have some possible major upheaval stuff going on and I keep forgetting ingredients and or changing my mond on what to make so this week looks a whole lot like last week!
Friday– We finally had the Kobayashi Maru with pork So good!!!
Saturday– We had Raley Gravy
Sunday–Hubby will be gone so kids and I will probably have leftovers or hot dogs
Monday– Chicken & Gnocchi Soup that has been planned FOREVER!
Tuesday– Salmon and Mac
Wednesday– Beef Taco Skillet
Thursday– Chicken Ranch Tacos But since that would mean two Mexican style dishes in a row I foresee a change in the line-up…..sigh

This weekend I’ve been trying to make as many freezer meals as I can before baby… Even though that’s still 3 months away, I’ve been trying to make at least small things that can be frozen and doubling all of our casseroles for the week…

you are SO SMART to do that…I didn’t do any of that and the only reason we had any meals in the freezer was thanks to other people who helped us out and I can’t tell you how GRATEFUL I’ve been to have those dinners in the freezer the last few months since owen was born. it’s been WONDERFUL. keep it up, you’ll be glad you did it

I totally cheat! I buy the cabbage in a bag, add mayo, somewhere around a tablespoon of sugar, then salt and pepper to taste. That’s it. Easy and yummy! Some add carrots.

One week each winter I love to have a “bake day”, which I’m doing Thursday. The kids and I pick baked goods to make or prep and freeze. This year we are making lemon bars, iced sugar cookies, & blondies, and freezing chocolate chip and brown sugar cookies doughs & pie crust.
I like the bake day idea – that is so fun!

Alright… It is time I get things back in order and get back to menu planning for real! I have been slacking the past couple of weeks. Like a poster above, I need to get on the freezer meals since I’m due with baby #2 in April and time is running out quick

Sunday: Panera broccoli cheese soup and yummy bread rolls (Bridgeford frozen dough is defrosted and cooking now…. Smells amazing!!!) x2 to freeze, if we don’t eat it all
Monday: Kahlua pork with macaroni sale and rice -Hawaii style x2 to freeze for the pork
Tuesday: steak sandwiches with arugula, blue cheese, and a red onion/balsamic/ butterreduction sauce that I could drink from a cup it is so good.
Wednesday: homemade Mac n cheese n salad x2 to freeze
Thursday: mommy has book club so it’s Daddy dinner night… They will probably get fast food
Friday: dinner at a friends- we need to bring something
Saturday: olive garden potato and sausage soup -zuppa Toscana x2 to freeze
I think my hopes of actually getting 4 meals in the freezer might be a little lofty, but we will see how it goes.

Thank you Kim. I tried to do the make-ahead stuff so I could send some over to my father-in-law and brother-in-law to store in the freezer, but we have also been getting meals from neighbors. Amazing how many people are willing to step in to love and support you in difficult times.
Only changed on night on last weeks menu! It was super nice out so David wanted to grill steaks! This week I’m doing doubles of everything to get the freezer stocked back up!
