Week 270 Menu

My baby is six months old. I can’t believe six months have passed since Owen’s momentous arrival. It seems like just yesterday but also like another lifetime. I personally feel a million times better now than I did then…physically, mentally and emotionally. But I am still feeling every bit as grateful, grateful for this sometimes fragile yet always beautiful experience called life.

Now for a bit of the routine of life…

MONDAY:
Pasta with Arugula and White Beans

TUESDAY:
– Penne with Broccoli & Chicken in Cream Sauce

WEDNESDAY:
Vegetarian Chickpea Burgers

THURSDAY:
– Leftovers

FRIDAY:
Homemade pizza, flavors tbd

    What a cutie! My youngest just turned 6 months on Friday. I can’t believe how fast the time goes! I’ve read your blog for a while, but this is my first time posting a menu. Here goes:

    Monday – Cheesy Corn Chowder
    Tuesday – Chicken Enchilladas
    Wednesday – Beef & Broccoli (crockpot), brown rice & Trader Joe’s BBQ Buns
    Thursday – leftovers
    Friday – eat out
    Saturday – “OMG” chicken (got off Pinterest), mac & cheese, greenbeans
    Sunday – Caprese Grilled Cheese & salad

    Whew! I did it and it wasn’t a bit painful. :) Now on to cooking!

    Sunday – special dinner – celebrating meeting my husband 30! years ago! so lobster mac and cheese, steak, and haricot verts!
    monday – salmon with french fries and asparagus
    Tuesday- spaghetti and meatballs (never got to it last week)
    Wednesday – chicken breast ( not sure how yet) with roasted potatoes and salad
    thursday – soup?
    friday – out!
    saturday – leftovers

    oh and the chorizo stuffed peppers from last week were awesome!

    Sunday is always breakfast for dinner. So pancakes, scrambled eggs and fruit salad.
    Monday – grilled chicken Parmesan with green salad
    Tuesday – chicken and broccoli cheese casserole
    Wednesday – quesadillas
    Thursday – grilled Italian sausage with veggies and potatoes
    Friday – pizza and a movie night!
    Saturday – leftovers

    What a great photo of your little cutie!
    Easy this week because we leave for spring break at the end — Minneapolis! While the husband is working there, we’ll all be playing there! At least we’ll be together :) But my dad will be at our house all week working on all our renovations, particularly the kitchen ones (nice since we’ll all gone while the kitchen is a disaster. So I need to create a bunch of meals for him to just pull out of the freezer while we’re gone. I’m hoping some our leftovers will work nicely for that!

    Sunday: Paninis with grilled potatoes, green beans and cantaloupe.
    Monday: Mushroom and spinach quiche with mixed green salads.
    Tuesday: Southwest chili mac.
    Wednesday: Leftovers or out.
    Thursday: ?? Maybe pumpkin bacon pasta but it’s already a pasta-heavy week so I’m not sure.
    Friday: Spaghetti and homemade turkey meatballs (just perfected a great recipe with panko), salads and garlic bread.
    Saturday: Eating somewhere in Madison, Wis.

      Thursday will either be bacon-wrapped fish or hoisin chicken lettuce wraps. Both sound great right now!

      I wish we were having last weeks weather (80s in March in MN- crazy but nice) for you instead of the rain we’re supposed to have this week!Hopefully the sunshine will return in time for your visit.

  5. Sunday: Breakfast pizza. The house already smells like bacon and it’s phenomenal.
    Monday: FFY and TBD.
    Tuesday: Orzo risotto with chicken and spring vegetables.
    Wednesday: Vegetarian black bean burgers.
    Thursday: Winter pasta
    Friday: Takeout
    Saturday: Very much a TBD situation, though if the weather breaks I’m going to clean the grill and do something outside.

    Monday: Out as it’s my birthday! And all I want is a really good burger…
    Tuesday: BBQ Chicken Salad
    Wednesday: Italian Egg Drop Soup
    Thursday: Coconut curry shrimp and veggie stir-fry
    Friday: Beer Mac & Cheese with bacon and broccoli (hubby has to carb load for a 10k Saturday, and well, pregnant me doesn’t mind comfort food one bit)
    Saturday: Sloppy Joe’s

    I’m also making pasta salad, breakfast burritos and roasting a chicken as baby countdown, must have food in the freezer craziness continues!

  9. Our precious, baby boy decided to make his (early) appearance last week! So, needless to say, we did not stick to the “menu” I had planned last week. We have been blessed with family here to make plenty of good food for us. So, we will have a ton of leftovers to re-purpose for this week. Yay!!!

    Sunday: Roast turkey and cranberry sauce
    Monday: Leftover chicken pot pie
    Tuesday: Turkey sandwiches
    Wednesday: Baked spaghetti with leftover pasta
    Thursday: Chicken breasts stuffed with cheese and mushrooms
    Friday: Yorkshire pudding with cranberry sauce
    Saturday: Out

    I made donuffins yesterday and they were a hit!…..will definitely make another batch. I started out making red velvet brownies as planned last Monday. I converted them into regular chocolate brownies after I couldn’t bring myself to use 2 containers of red dye in order to make them red. All that dye just didn’t seem necessary to put in our bodies (not to mention stain my wooden spoon!)

    The regular, everyday brownies were wonderful :-)

      so, anyway…I read the original red velvet had a red tint because of something happening with the cocoa…I’m on a quest to find such a recipe!

    I didn’t realize you had a 6 month old! I have been behind on my blog reading because I can barely keep up as the mom of an almost 6 month old. Knowing how you have older kids, now I really don’t know how you make such elaborate weekly menus. I am lucky when I cook two big meals on the weekends to have leftovers and scrap together the rest of the week!

      Actually – one question for you knowing that you have an infant. How do you handle eating out with your infant? Our baby does not do well in restaurants and I miss going out for dinner!

      first off…I don’t ever plan anything too elaborate, and my menu is quite fluid! ;) but I do my best to stick to the plan each week.

      and, so far, owen has been really good when we’ve gone to restaurants…so I don’t have any advice! there was a time when our girls were younger that it was SO annoying to go out with them…they eventually grew out of it, so honestly, I think it’s just about time…sad to say! ;)

    I am just me! So I cook three meals a week and live on leftovers the other days. But I also do my meal planning two weeks at a time and shop every other week. So my two week meal plan is as follows! (Also, just discovered this blog and it makes me so happy! I’ve been obsessed with meal planning for a while and never found others!)

      Gyro Meatloaf:

      Combine 1 pkg. frozen chopped spinach (thawed and squeezed dry), 1 cup bread crumbs, 1 small onion finely chopped, 2 eggs, 1/4 cup grated romano cheese, 2 tsp. dried oregano, 1-1/2 tsp. garlic powder, 2 lbs. ground lamb or beef.

      Mix all above ingredients together, shape into a loaf, and bake uncovered for 55-60 min @ 350 degrees.

      Serve with tzatsiki sauce. I used leftovers for lunch today with a pita and lettuce and tomato.

    Mon- Fake take out (Appetizers from the freezer section.)
    Tues- Crock pot stew
    Wed- Out (haven’t got a clue as to where we will be.)
    Thur- Pork Roast and Kraut in the crockpot
    Fri- BBQ Chick (I hope to get to this. It has been on the menu for three weeks now)
    Sat- Meatloaf and mashed potatos

    Sunday – BBQ pulled pork, corn on cob, coleslaw, cornbread and the Baked brownies (they just came out of the oven and smell amazing).
    Monday – Spaghetti with meat sauce
    Tuesday – Thai shrimp curry for the adults and Soup and grilled ham and cheese for kids
    Wednesday – Chicken thighs, mashed potatoes, peas
    Thursday – Boys dinner Eggs and sausage (Mom at a conference)
    Friday – BBQ burgers

    Jane – have to say that the island pork and coconut rice you shared on the site was unreal the boys went though a whole tenderloin themselves!! So great and easy enough to do on a weeknight…WIN!

  19. Wow, Owen is 6 months already?!?! I can’t believe how quickly it’s gone by!

    This week, everything has started to give me heartburn, including plain bagels and water, so we’ll see if I actually get around to everything on the menu. Maybe, maybe not. This little guy will probably come out looking like Esau if the heartburn wives tales are true :)

    Sunday-Tomato Basil Soup, Bacon Grilled Cheese Sandwiches (Only because I have to use up a pack of bacon, not because we’re bacon addicts. Even though, well, we are…)

    Sunday: Chicken parmigana, pasta, salad with Trader Joe’s cannolis for dessert, I am a cannoli obsessed person and living in CA and not my native NY it is nice to find a decent one!
    Monday: Burritos, refried beans, rice
    Tuesday: Chili and cornbread
    Wednesday: Dijon pork chops ( spread dijon mustard on pork chops, dredge in pork shake and bake and bake, yummy and smell great) crispy potatoes ( halved red potatoes baked in melted butter mixed with parmesan and garlic powder) broccoli
    Thursday: beef and cheese subs( cut a hoagie roll in half, fill with roast beef and cheddar and broil a few minutes) top with bbq sauce and onion rings, fruit salad
    Friday: Out for fish tacos, we don’t eat meat on Fridays in Lent
    Saturday: Out to eat with girlfriend…yippee.

      I am cannoli obsessed myself and, like you, miss a good east coast cannoli! my grocery store in san diego carried shells that were semi-decent, and I actually had created a darn good recipe. but, alas, I have no idea where my handwritten notes for the recipe went! it’s a tragedy. maybe I’ll just have to give it another try and start from scratch…

    Mon: Chinese pork stew and rice
    Tue: Pasta and tomato sauce with salad
    Wed: Pepper, tomato and basil risotto
    Thur: Pulled pork rolls, coleslaw and fries
    Fri: Dinner at mum’s
    Sat: Flying to Rome for a couple of days, so it’s pizza, pasta and ice cream for the rest of the week. Yippee!

      I would like to get your recipe for Chinese Pork Stew if you’re willing to share. ;)

      Sorry to take so long to reply! Apologies also that my stew isn’t exactly authentic; it’s from a 1960s cookbook my grandma handed down. I think it qualified as Chinese back then because of the pineapple and soy sauce! I sometimes add a star anise for a bit more flavour. I generally cook the stew on the hob but it also works well in a slow cooker. I hope you like it if you try it!

      Serves 4

      700g (1.5lb) diced pork (in 2-3cm/1 inch dice)
      1 large onion, halved and sliced
      1 heaped tbsp flour
      250ml (1 cup) chicken stock
      1 tbsp vinegar
      1 tbsp soy sauce
      2 green peppers, sliced
      225g (8oz) can pineapple in juice
      a handful of pimentos

      Toss the pork in flour (seasoned with a little pepper) and brown in batches. Set aside.

      Cook the onion until softened then add any remaining flour, the stock, vinegar, soy and juice from the pineapple. Put the pork back in the pot with any juices, bring to a simmer and cook gently for 1h30.

      Add the peppers and pineapple and simmer for a further 30 minutes. Stir in the pimentos just before serving.

    I only have a couple of meals planned this week as I’m still very busy at work, the teenagers are on spring break, and my husband will be out of town for four days.

    Wednesday: Out for Asian food

    Owen is so cute! We have a pretty relaxed week, so I am excited to cook some recipes/dishes that take a bit longer than what i normally cook.

    That is the cutest picture. The photos of my kids with the little drips on their chins were always my favorite – when they were babies, not the pictures with drips on their chins now that they are 8

  37. Congratulations! The first six months are definitely the hardest – after that it keeps getting easier (unless and until you have a 2nd and then you end up right back at really really hard again for a while, but that too gets easier as time goes by!).
    Anyway, looking forward to trying your arugula and white bean dish – my boys (2 and 4.5) love beans – it sounds delish – and very similar to a white bean, kale and sausage dish I’m making this week that we all love.

      thanks for the congrats! :) and, seriously, you’re right, that first 6 months can be a doozy…last night we went 9 hours between feedings, I am hoping we’ve turned a corner in that regard!!! {knock on wood!}

    Tuesday – veggie stir fry on brown rice, mandarin oranges

    Wednesday – baked beans, mixed veggies, garlic bread, fruit

    Thursday – veggie quesadillas, fruit

    Friday – breakfast pizza, fruit

    Saturday – grilled shrimp salad, garlic bread

    Sunday – sandwiches, whatever is in the fridge to accompany

    I just found this site yesterday, and I love it! I have a 4-year-old son who is picky some days and a great eater on others so I love getting new ideas from Jane and everyone else! :)

    Weekly Dessert(my hubby has huge sweet tooth so I always make a dessert for him to munch on throughout the week): Blueberry Streussel Cheesecake (from Kraft pamphlet)
    Sun: Turkey Meatballs & Tomato Sauce w/ wheat penne
    Mon: Leftover Meatball Sandwiches w/ Spaghetti Soup
    Tues: Chicken Mole & Brown Rice Burritos w/ guac & chips
    Wed: Roast Salmon w/ red curry sauce, stir-fry green beans & steamed brown rice
    Th: Pasta Primavera (bell pepp, zucc, tom, olives, spinach, & onion) w/ garlic twists
    Fri: Freezer Meal (I think it’s Cheesy Beef Mac???)
    Sat: Out (Food Truck Festival!)
